This is a classic old-fashioned lentil soup with vegetables, spices, tomato paste/sauce makes this soup so good that you will enjoy crusty bread for dipping.

Lentil soup is the most basic soup that you can dream to make compared to all fancy soup recipes out there on a chilly night. But this vegetarian lentil soup recipe is one of the most comforting and healthy soups you can make.

The ingredients that go into making the lentil soup are very commonly available in your pantry:
  • Lentils (Brown/Red/Green)
  • Vegetables (I have used carrot, potatoes, garlic, onion, and celery)
  • Spices ( salt & pepper, paprika, cumin powder, coriander powder, dried thyme, dried oregano, turmeric)
  • Tomato Paste
  • Tomato Sauce
  • Vegetable / Chicken Stock
  • Lemon Juice ( takes the flavour of soup to next level)

What type of lentils is best for the lentil soup recipe?

You can use brown, red, or green dry lentils for this soup. The best is to soak the lentils overnight or for at least for 30mins to 1hr for them to cook faster.

I have used brown dried lentils for this soup as I like the color of the lentils that impacts the final dish color.

Yes! Lentils have a lot of nutritional benefits as they are high in fiber, B vitamin, iron, protein, and also they are low on fat.

If you are on a vegetarian diet then lentils are a great source of protein for you. Also, they are low on calories too.

How do you store the lentil soup leftovers and freeze the lentil soup?

Storing:  You can store the leftovers in an airtight container in the refrigerator for 5 days and this soup is super good to serve for dinner.

Freezing:   Better to serve, you can freeze this soup in individual portions in freezer-safe containers or Ziploc bags. This will stay good for a few months.

Reheating:    Thaw the soup before eating it in the refrigerator.
You can heat the soup in the microwave or sump it in a pot and heat it through on the stovetop.

How to make lentil soup from scratch?

Step1:  Wash and soak the dried lentils in water for at least 30mins. If you soak them overnight then it's better.

Step2:  Heat oil in a stockpot/ soup pot/ dutch oven over medium heat. Add garlic, onion, celery, carrot, and potatoes and saute till the vegetables are soft. This should be done on low or medium heat for approximately 10mins.

Step3:   Add remaining ingredients except for lemon juice. Stir once, cover, and cook on medium heat for 30mins or till the lentils are soft.

Step4:   If you want to thicken the soup and take a small portion, cool it slightly, blend it, and add it back to the pot OR with a stick blender blend a small portion of the lentils in the pot.

Step5:    If you want to adjust the soup consistency then add some water if the soup turned thick. I did not blend the lentils, just left them as it is.

Step6:   Adjust salt and pepper. Finally add lemon juice, chopped cilantro, and serve! Enjoy with crusty bread!
