This homemade chicken noodle soup is a classic, comforting soup and is very easy to make in under 30 minutes. The ingredients are very simple and easily available n your pantry.

This version of the chicken noodle soup recipe is very simple and will take only 30 minutes to fix a comforting bowl of soup. 

You can cook chicken in the soup to prepare broth or get store-bought chicken broth and rotisserie chicken too.

You can make homemade stock for this soup, by simmering chicken along with vegetables and pasta altogether, further spicing up the soup by adding the herbs.

This comforting soup is made with ingredients that you will find easily in your pantry:
  • Chicken (either store-bought rotisserie or cook chicken breast meat and shred it)
  • Stock
  • Salt & Pepper
  • Dried Oregano
  • Dried Parsley
  • Dried Thyme
  • Chicken Bouillon
  • Carrot/Onion/Celery (or any vegetable of your choice
  • Ginger
  • Garlic
  • Pasta of your choice

Is chicken noodle soup healthy?

Homemade anything is healthy compared to canned or restaurant ones. So this chicken noodle soup is perfect for a cozy chilly night to feel the comfort.

Can you freeze chicken noodle soup?

Yes! You can store the soup in the refrigerator for up to 5days.
To freeze this soup, it's better to store it in individual portions, that way it will become easier to thaw and heat the quantity that you actually need. You can freeze the soup for up to 1 month.

If you are not going to consume the soup immediately, then you need to cook the noodles/pasta separately and store that in separate containers. As, if the pasta sits in the soup it will soak up the liquid.

What kind of noodles is the best chicken noodle soup?

The best noodles that go very well in this soup are Egg Noodles. If you can't find egg noodles then you can go with your choice of pasta: Rotini, Farfalle, Elbow Macaroni.

How long does homemade chicken noodle soup last?

If you are planning to refrigerate the soup then it can stay good for up to 5days, but do not add noodles or pasta to soup, as the noodles with soak up the stock from soup.

If you are planning to freeze this soup then it can stay good for up to 1 month, again do not add pasta to the soup. Instead, add dry pasta when you are heating the soup.

Is chicken noodle soup good for you?

The old-fashioned approach to treat a cold or when you are feeling under the weather is serving with a bowl with warm soup loaded with chicken and vegetables.

How to make homemade chicken noodle soup?

Step1:   Heat a dutch oven/stockpot and add oil. Add ginger, garlic, onion, carrot, and celery.

Step2:    Saute vegetables till they are tender. Add salt, pepper, and stock to the dutch oven. Let it come to a boil and let it boil for 5 mins.

Step3:   Add cooked shredded chicken to the pot, add oregano, parsley, thyme, and chicken bouillon. Cover the pot and let it cook for 10mins.

Step4:   Add pasta to the pot and let cook till the pasta is al dente.
Switch off the heat and serve while it's hot.

Tip's to make homemade chicken noodle soup from scratch:

  • I have not used any store-bought stock. I have simmered chicken breast, along with salt and pepper. Strained the water in which chicken is simmered to separate any impurities and used that as stock.
  • Do not leave the pasta in the soup for a long time, as it will soak up the liquid from the soup and will grow double in size. 
  • Alternatively, you can make chicken stock by using Chicken bouillon or even get a storebought stock. 
  • Use any vegetables of your choice if you do not find the veggies mentioned in the recipe.
  • Use low sodium chicken broth if you are going for a store-bought one.
  • Using chicken thighs in the soup is a better option but I have used chicken breast meat and it did not create much of a difference.
  • To make your own chicken stock, try using chicken bones along with vegetables. Chicken bones give amazing flavor to the broth.
  • To make this soup creamy you can add whole cream and simmer the soup. For just thick broth, you can mix cornstarch slurry with the soup. Cornstarch slurry is made by mixing 2 Tbsp cornstarch with 1.5Tbsp water.
  • If you do not wish to cook chicken at home and save time, then you can use a store-bought rotisserie chicken too.
  • If the pasta soaks up the soup then you can add more stock to the pot and adjust salt, pepper, and other spices.
