I always look to fix quick and easy plus delicious dinners,so always soups are on the menu along with that I too make some stir fry recipe often. 

This ramen noodles is my best to go recipe and can be made in a jiffy plus all plates are going to get wiped clean-that's for sure!



You will have to discard the seasoning pack that comes along with the packet,and add lots of veggies and chicken to make this an easy and healthy meal.




I have also made this amazing homemade chicken ramen stir fry sauce mix that makes this recipe amazing plus you will get restaurant style food with just ramen!

Chicken Ramen Noodles



What are ramen ingredients?



  • Dry Ramen Noodles:  Best and easy dinner can be fixed with the easily available ramen noodles in most grocery stores. You can also make this recipe with instant noodles like Maggi,you just need to discard the seasoning packet that comes along in the package.

  • Vegetables of your choice:  I have added broccoli,carrots,red and green bell peppers,spring onion,white button mushrooms. You can add veggies of your choice too.

  • Chicken Ramen stir fry sauce:  The sauce is made of light and dark soy sauce,worcestershire sauce, sriracha, white vinegar,hoisin,brown sugar,black pepper powder and water.

  • Chicken:  I have used chicken breast meat but even thigh meat, that works equally well. If you want vegetarian option then you can use tofu or cottage cheese.

How to make homemade chicken ramen stir fry sauce?


To make the ramen noodle a healthy and delicious meal,just discard the seasoning packet which comes along with the noodle packet.




To make homemade ramen seasoning in this recipe I have mixed together light and dark soy sauce(low sodium),worcestershire sauce,hoisin sauce,sriracha,white vinegar,brown sugar,black pepper powder and drinking water.

How to cook chicken for ramen noodles?


If you are planning to make soupy spicy ramen recipe then you can add chicken to stock and then cook the chicken in broth and further shred it that adds lot of flavors to final soup.



Another delicious way of adding chicken to ramen is in stir fry recipe where you first caramelize the chicken in the wok/pan or grill and then make pieces of chicken or chop the chicken and fry it till it caramelizes and further add to the ramen.




How do you make chicken ramen from scratch?


Step1:   Boil a pot of water and cook the ramen noodle or any instant noodle or even udon noodles,for 1 to 2 mins,as they overcook very soon (and if they overook,you wont like the final noodle dish),drain the noodles under cold tap water.

To avoid the noodles sticking to each other add a teaspoon of oil and toss well.



Step2:   In a bowl add the chicken pieces with salt,black pepper powder,cornstarch and soy sauce. Mix well to marinate the chicken.This step is also done to tenderize the chicken.

Step3:  Chop and keep aside the veggies required or you want to use in the recipe. I have julienne carrots,chopped spring onion,chopped green and red bell pepper,sliced white button mushrooms and chopped broccoli.

Step4:  In a wok/pan,add oil,when its hot,add minced ginger,garlic and saute.



Further add the veggies one by one,and saute further till the veggies are slightly soft.As shown in the picture 1 , 2 and 3 below ⇲



Step5:  Move the veggies to one side of the pan and add the chicken pieces into the pan.(If there is lot of leftover marinade in your pan then do not add that to the pan just discard it).



Saute the chicken till the chicken is cooked thoroughly.As shown in picture 4 and 5 below ⇲



Step6:   Next add the stir fry sauce mix to the wok/pan and mix well.

Step7:   Saute everything well and finally add the ramen and keep tossing to mix well.

Serve immediately.

Pro Tips To Make This Spicy Chicken Ramen Recipe:


  • Cook the noodles for max 2 mins as they tend to overcook soon.Run under cold water immediately and drain.

  • If you do not like to use ramen or instant noodles then you can use udon noodles or even pasta of your choice.

  • If you like soupy ramen instead of stir fry ramen then add chicken stock to the recipe before you add cooked ramen and let it come to a boil.Finally add ramen and boil once and serve.If you leave ramen for long in soup they will be overcooked as they will drink up stock.

  • Cook the noodles separately if you are making soupy chicken ramen recipe.If you add ramen to the stock and cook there will be lot of starch released which we will be end up having plus the final soupy noodles will be cloudy and not clear.

  • For garnish add some sesame oil,sesame seeds,chopped spring onion greens.

Ingredients:

For Ramen Stir Fry Sauce:
For Chicken:
  • 1 Cup Chicken Thigh/Breast,pieces
  • As per need Salt
  • 1/2 tsp Black Pepper Powder
  • 1 Tbsp Light Soy Sauce,low sodium
  • 1/2 tsp Cornstarch
Additional:
  • 3 Packets/ Blocks ,Ramen Noodles/Instant Noodles(Maggi),discard seasoning packet
  • 2 Tbsp Vegetable Oil/Sesame Oil
  • 5 cloves Garlic,minced
  • 1 Inch Ginger,minced
  • 1 small Red Bell Pepper,chopped
  • 1 small Green Bell Pepper,chopped
  • 1 small Onion,chopped
  • 2 Spring Onion,chopped,whites and green separated
  • 1/3 Cup Broccoli florets,chopped
  • 1/3 Cup White Button Mushrooms,sliced
  • 1/4 Cup Carrot,sticks

  1.   2. Delicious, everyone loved it, but overly spicy! I would reduce the amount of sriracha to 1 Tbs next time.
