These apple turnovers are very easy to make when you crave a dessert, plus the vanilla glaze gives the extra sweetness that you will love.

Puff Pastry Apple Turnovers

The recipe of puff pastry apple turnovers is very easy to make and will require just a few basic ingredients:
  • Puff Pastry
  • Apples
  • Butter
  • Brown Sugar
  • Cinnamon
  • Nutmeg
  • Cornstarch
  • Salt
  • Powdered Sugar
  • Milk
  • Egg + Water (for egg wash)

What is an Apple Turnover?

A turnover is made of puff pastry sheets filled with sweet apple-cinnamon nutmeg filling, further sealed the edges, and baking till they are flaky.

Can you freeze baked apple turnovers with puff pastry?

Freezing baked apple turnovers is not advisable as the puff pastry will get soggy and wot reheat very well.

Once you are done sealing the turnovers(do not brush them with egg wash), arrange them on a baking sheet and freeze for some time, then place them in a Ziploc bag and freeze.
To bake them, just take them out of the freezer and bake them(do not thaw).

How do you seal the edges of puff pastry?

Arrange the puff pastry sheets, and place the filling on half of the square, towards the edges.
Apply egg wash on the edges of the sheet and cover the filling with another half of the pastry sheet.
Using a fork, crimp the edges to seal the pastry.

How do you store homemade apple turnovers?

Freshly baked apple turnovers would stay fresh for a few hours over the counter or even store in a container.

To refrigerate the turnovers store them in small plastic or glass container and they will be fine for a week. To serve bake them again till they are heated thoroughly.

Can you use milk instead of egg on puff pastry?

Yes! If you want the turnovers without eggs in them then you can use eggs to brush the top of the turnovers.

It won't make the top of turnovers super glossy like when we use eggs to brush the top, but milk would make the top of turnovers golden brown.

How to keep apple turnover filling from leaking?

No matter how much we try to avoid the filling from leaking there will be one or two turnovers whose filling will leak.

But most of the turnovers will turn perfect! 
To achieve this:
  • Once you have sealed the turnovers, you have to refrigerate the turnovers for at least 15mins to cool the pastry sheets again. 
  • The egg wash will help the puff pastry to stay intact and bake well.
  • Try to crimp the edges tightly with a fork.

How do I keep apple turnovers from getting soggy?

After you have sealed the edges of the apple turnovers after filling them, you have to refrigerate the turnovers to avoid the puff pastry from getting soggy.

Put some slits on top of every turnover before baking them, this will help the steam escape the turnovers while baking them and avoid the turnovers from getting soggy.

How to make apple turnovers using puff pastry?

Step1:  Thaw puff pastry sheets as per package instructions.

Step2:  Prepare Filling.
In a pan, melt butter. Add diced apples, cinnamon, nutmeg, salt, brown sugar, and cornstarch.
Cook it till the apple pieces are soft and all the liquid is evaporated, it thickens and starts to come together. Keep this aside to cool.

Step3:  Dust the counter with flour, and roll each puff pastry approx. 11" to 12" square.
Do not roll the puff pastry too thin as it won't rise well after baking.

Cut the pastry with a pizza cutter or pastry wheel, into 4 equal parts. 

Step4:   Preheat the oven to 400F and line a baking tray with parchment paper. Set this aside.

Step5:   Leave some pastry sheet on the edges and spoon-filling towards the center or on one half of the square.  

Step6:   Whisk together an egg and water. Apply this egg wash on the edges of the pastry sheet.

Bring the other end of the sheet covering the filing and close the puff pastry. With a fork crimp the edges to seal the turnovers.
Repeat this for all turnovers.

Make slits on top of turnovers and arrange them on a sheet and refrigerate for 15mins.

Step7:   Brush the egg wash over turnovers and bake for 15 to 20 mins till the top is golden brown and pastry is puffed well.

Step8:   While the turnovers are baking, whisk together sugar and milk to make the glaze.

Step9:    When the turnovers are slightly warm, drizzle glaze over turnovers.

Tips to make easy apple turnovers recipe:

  • Always keep the turnovers refrigerated once you have filled them and sealed them. Keeping the pastry chilled helps the pastry to rise well.
  • The egg wash gives a glaze to the turnovers. You can use milk instead of egg wash.
  • Always bake the pastry initially at a lower temperature and then at a higher temperature, this will help puff pastry to puff well.
  • To avoid filling from leaking always seal the edges of the pastry well.
  • Use cornstarch to thicken the filling. This will avoid leaking puff pastry while baking.
  • The more liquid content in the filling there is more chances of pastry leaking the filling while baking. So it's best to keep the filling dry.
