These easy and delicious spicy Thai noodles can be fixed in under 20minutes! This is a one-pot meal idea that will make your weeknight or weekend meal quick and yum!

Spicy Thai noodles are perfect if you love a quick and delicious dinner under 20mins. 

Ingredients used are very easy to find in your pantry plus the dish is totally customizable by adding a protein of your choice.

The sauce for these Thai noodles is spicy and good(if you can handle the heat!), plus you can adjust the heat level as per your comfort.

Spicy Thai Noodles

The best part of this recipe is that you can use any regular pasta of your choice, there is no specific pasta to be used in this recipe.

You can make this Thai noodles recipe vegetarian and also you can choose to add shrimp, chicken, eggs too.

What ingredients are in a spicy Thai noodles recipe?

These 20minute spicy Thai noodles need some basic ingredients:

  • Linguine / Spaghetti / Fettuccine
  • Garlic
  • Carrot
  • Ginger
  • Zucchini
  • Sauce ( Brown Sugar, Dark & Light Soy Sauce, Fish Sauce, Sriracha, Tomato Ketchup, White Vinegar, Water, Chili Oil)
  • Roasted Peanuts / Sesame Seeds/Green Onion/Cilantro (Garnish)

What noodles to use for spicy Thai noodles?

You can use the rice noodles that are typically used in Thai dishes. But if you can't find them, then use any kind of pasta. From spaghetti, fettuccine, linguine to any Asian noodles you can find in most stores.

Can I add protein to these Thai spicy Noodles?

Yes! although this recipe I have shared is vegetarian you can add protein of your choice. You can choose shrimp, chicken, eggs, tofu to be added to this dish.

How to make spicy Thai noodles?

Step1:   Cook Pasta/ Noodles: In a stockpot, fill the pot halfway with water, salt, and a tablespoon of oil and bring it to a boil.

Add pasta/ noodles to the pot and cook the pasta as per package instructions.

Once the pasta is cooked drain and set aside.

Step2:   Prepare Sauce:  In a bowl or cup add brown sugar, dark soy sauce, light soy sauce, fish sauce, sriracha, tomato ketchup, white vinegar, water, and chili oil. Mix well and keep aside.

Step3:   Prepare Thai noodles:  In a pan/skillet add oil. When oil is hot, add ginger, garlic, zucchini, carrot, and saute till the vegetables are soft.

Step4:   Add the prepared sauce to the pan and simmer for some time. 

Step5:   Add noodles, salt and toss well to coat the noodles well with the sauce.

Step6:   Garnish with sesame seeds, roasted peanuts, cilantro, and chopped green onion. Serve immediately.

Tips to make the best spicy Thai noodles with vegetables:

  • You can use any kind of noodles/long pasta to make this dish. The traditional rice noodles that go in Thai recipes, can be used too.
  • Adjust heat in this recipe as per your tolerance level.
  • I have used store-bought chili sauce in this recipe.
  • You can add some red pepper flakes to this dish for extra heat if you love spicy food!
  • If you are vegetarian then you can skip the fish sauce. Adding fish sauce to the dish gives amazing flavor to the final dish, although the sauce smells funny. But adding along with other ingredients won't make you realize the smell of fish sauce.
