What goes in these strawberry turnovers with puff pastry?
You will need the following ingredients to make these amazing turnovers at home:- Fresh Strawberries
- Sugar
- Cream Cheese
- Puff Pastry
- Vanilla
- Egg
- Butter
- Cornstarch
- Lemon Juice
- Milk
How to make strawberry turnovers from scratch?
Step1: Make the strawberry filling
Use fresh strawberries to make the filling. Frozen strawberries can be used too but fresh ones make the filling better.Slice the strawberries and add to the pan, add butter, salt, sugar cornstarch, and sugar. (I added more sugar as my strawberries were super tart)
Let the strawberries cook till the strawberry filling is thick. Use a food masher to smash the berries.
Step2: Prepare the cream cheese filling
In a mixing bowl, add cream cheese, vanilla, and sugar and whisk it well till it's fluffy and airy.Mix this well and keep it aside.
Step3: Prepare the glaze
In a mixing bowl, add sugar, vanilla, milk, and lemon juice and whisk it well till smooth. If the glaze dries up and whisk it well again by adding a little more milk till it's smooth.
Step4: Make the strawberry puff
Add a spoonful of each (strawberry filling and cream cheese mix) to one corner of the puff pastry square.
Close the turnovers by bringing the opposite corner of the pastry together to seal the edges then with a fork seal the sides of the turnovers.
Make a small slit on top and brush the top with whisked egg.
Last, bake the turnovers till the top is golden brown or they are flaky and crisp to your liking.
Let them cool down completely and add the glaze on top.
How to thicken the strawberry filling?
Adding cornstarch is important as the filling usually turns out runny. Strawberry will turn juicy as they cook and filling will turn liquidy, so adding cornstarch is important.
Can I store these strawberry cheesecake puffs?
These turnovers taste best when they are fresh and warm. If you store them then they will turn soggy. Reheating them in the microwave won't make them crisp and flaky again.
You can try baking them again in the oven and see if they turn crisp. (I haven't tried as these vanished in no time)
