Chunky Chicken Noodle Soup
Try this amazingly quick,delicious and satisfying creamy chicken noodle soup for the comfort that you are looking, this winter season.
Creamy Chunky Chicken Noodle Soup Ingredients:
- Shredded Chicken
- Pasta / Noodles of your choice
- Vegetables of your choice
- Milk + Cream
- Spices + Chicken Bouillon
- Chicken Stock/ Vegetable Stock
Tip's to make best homemade chunky chicken noodle Soup:
- To get shredded Chicken for this recipe, you can either boil the boneless chicken breast and then shred it or get a rotisserie chicken from store then shred it.
- To shred the chicken you can either use a pair of fork or use hand or stand mixer to get this done.Yes! hand mixer or stand mixer is so good at this work too.
- Always use milk and cream at room temperature.Do not use chilled milk and cream to cook.This will prevent curdling the milk and cream when cooking in soup.
- Do not boil the soup after adding milk and cream.This will led to curdling the soup,instead simmer it till its done.
- Use vegetables of your choice in this soup.
- Always saute the flour before adding the stock.This will prevent the flour from forming lumps.

To make soup creamy you can add cream,make flour roux,add milk,add coconut milk to make the soup thick and creamy.
- What can be used in soup instead of cream or flour in soup / How can I thicken soup without flour?
Instead of flour or cream,you can use coconut milk,pureed cauliflower, pureed potato,soaked and pureed bread to thicken the soup.
- What can I use if I dont have chicken stock / chicken broth?
Use a chicken or vegetable Bouillon instead of chicken or vegetable stock. Just dissolve the bouillon in warm water to make stock.
How to make Creamy Chunky Chicken Noodle Soup:
Step1: In a stock pot/ sauce pan/ large hollow pot,add butter when,its melted,add onions and garlic as shown in picture 1 and 2.
Saute it for a while till onions turn pink.
Step2: Add celery,carrot slices and saute further till the veggies are slightly cooked as shown in picture 3.
Step3: Add flour to it and saute till the flour is slightly pink as shown in picture 4.
Make sure you do not burn the flour.
Step4: Add stock to the pot and mix well.
Next add the green peas,shredded chicken*(check Tip's section for this) and mix well,as shown in picture 5 and 6.
Step5: Next add the spices + bouillon, as mentioned in the recipe,give a stir as shown in picture 7.
Step6: Reduce the heat to lowest setting of stove top,add the milk and cream to this and stir well.
Check for salt and adjust accordingly.
Step7: Finally add the pasta/noodles,stir and let it simmer on lowest heat for sometime till the pasta is cooked.
Serve warm!

Ingredients
- 1 Medium Red Onion,chopped
- 3 Cloves Garlic,minced
- 2 Tbsp Unsalted Butter
- 1/2 Cup Carrot,sliced
- 1/2 Cup Celery,chopped
- 1/2 Cup Green Peas,frozen
- As per need Salt
- 1/2 tsp Thyme,dried
- 1/2 tsp Parsley,dried
- 1/2 tsp Oregano,dried
- 1/2 tsp Black Pepper Powder
- 4 Cups Unsalted Chicken Stock
- 2 Tbsp Flour
- 1/2 Cup Half and Half,low fat,at room temperature
- 1/2 Cup Milk,low fat,at room temperature
- 1 Chicken Bouillon
- 1 Cup Egg Noodles/ Pasta of your choice
Instructions
- In a stock pot/ sauce pan/ large hollow pot,add butter when,its melted,add onions and garlic.
