Cinnamon Sugar Pretzels(Cinnamon Sugar Soft Pretzels)



Pretzel Ingredients:


  • Pretzel dough:  The pretzel dough is made with flour, yeast, milk, sugar and butter. 

  • Cinnamon Sugar Mix

  • Butter:  Used in the dough and also to dip or apply melted butter generously on the baked pretzel bites.

If you love the famous Auntie Anne's cinnamon sugar pretzel then this recipe is best close to cinnamon sugar pretzel recipe.


The recipe if very easy and straightforward but the best is that these pretzel bites are baked.

How are pretzels made?


Step1:  In a mixing bowl/pyrex cup add the warm milk,yeast and sugar. 

Mix well till sugar dissolved well,cover and keep aside for the yeast to bloom as shown in picture 1.



Step2:  In a mixing bowl,add flour,sugar and melted butter.

Keep adding the yeast mix in batches and start making the dough.

Knead the dough till entire yeast mix has been used up. If the dough is sticky add a little flour to make it workable.

Cover the dough with a cling wrap and keep aside for the dough to rise as shown in picture 1.

Step3:  Once the dough has doubled in size, punch down the dough and knead it once.

Make same size three dough ball.


Roll each part of dough ball into a long log which is around 1/2 inch thick and cut pieces with a knife approximately  1 inch long.


Repeat this for remaining dough ball as shown in picture 2.


Step4:   Prepare the soda bath. Heat water in  pan and once it starts to boil,reduce the heat lightly and add baking soda to it.


Let it boil slightly till water slightly reduces,bring the heat to lowest and in batches add the dough pieces to water and let them stay for a 2 to 5 secs then with a slotted spoon slowly take the pieces out and arrange on a baking tray lined with parchment.


Repeat this step till you have used up all the dough pieces as shown in picture 2.


Step5:   Preheat oven 375F / 190 C.


Bake the pretzel bites till the tops are golden for approximately 15 to 20 mins. 


Turn them upside down in between to make sure there is even baking.


Let them slightly cool down for a minute.


Finally dip the pastry brush in melted butter and apply generously on all the baked pretzel bites and immediately toss them in a bowl with cinnamon powder and sugar mixed to coat well on all sides.

You can microwave the pretzels if they get hard by refrigeration or even bake then again to get them soft and warm to consume.

Mostly these delicious pretzel bites wont last longer to refrigerate them but in case you have leftovers then you can refrigerate them up to 3 days to get the same freshness once reheated.

  • Keep the yeast to bloom for at least 7 to 10 mins and dough to double in size for at least 35 to 40 mins.

  • Do not leave the dough pieces in baking soda bath for long,few seconds is enough.If you leave for longer then the dough will start spreading in the soda water and it will turn all messy.

  • Bake the pretzel bites as per temperature that suits your oven size. Since different ovens have different temperature capabilities so to get perfectly baked pretzel bites always check if they are cooked well or bake for more or less time to suit the individual oven temperatures.

  • Brush the baked pretzel bites with generous amount of melted butter,that will stick the cinnamon sugar mix very well to the pretzel bites.

  • For Dough:
  • 1.5 Cup Flour
  • 1.5 tsp Dry Active Yeast
  • 1/2 Cup Warm Milk
  • 1 Tbsp Sugar + 2 Tbsp Sugar
