You can customize this minestrone soup as per personal preference and add ingredients as per choice.

Minestrone Soup Ingredients:



  • Cheese Tortellini : Here I have used homemade cheese tortellini. You can get packaged cheese tortellini. I have shared step-wise pictures of how I have made the cheese tortellini just for an idea for you all.

  • Vegetables: Vegetables used in this recipe are onion,celery,carrot,tomato paste + crushed tomatoes,spinach,basil. You can add any vegetables of your choice,More details on vegetable choices are shared below.

  • Stock

  • Parmesan

  • Red Kidney Beans : Use cooked ,soaked tin of beans or soak them overnight and pressure cook them next day prior to cooking.

  • Spices: Here the spices that have been used are basil,parsley,oregano,thyme,cayenne pepper,black pepper powder,salt,sugar and bouillon.

How To Make Cheese Tortellini:



Here I am sharing a rough idea of how to make cheese tortellini at home.


You can always get a store bought package of tortellini but you can try your hands on making this pasta at home then give this a try.



Step1:  Make soft dough with 1 cup flour,little salt,an egg. In a mixing bowl add the flour and salt,mix them, add egg and mix well.

Next add water in batches to make soft smooth dough.



Step2:  Roll out the dough very thin or you can use pasta roller machine.

With a cookie cutter cut out circles as shown in picture 1 and place the filling of your choice as shown in picture 2.



Step3:  Apply some water to the edge of each circle and fold the circle and fold as shown in picture 3,4 and 5.


You can freeze the tortellini till you need to use them in cooking.

How To Make Tortellini Minestrone Soup:



Step1:  In a stock pot / Soup Pot add oil and add chopped onion and garlic minced. Saute till soft as shown in picture 7.



Step2:  Add the vegetables like carrots and celery,saute further for a few minutes as shown in picture 8.



Step3:   Drain the beans and add them to the pot as shown in picture 9.



Step4:   Add the crushed tomatoes and tomato paste,basil chopped,stock,bouillon and spices mentioned as shown in picture 10 and let it cook on medium heat for 10 to 15 minutes as shown in picture 11.



Step5:   Add spinach,tortellini and grated parmesan as shown in picture 12 ,13 and 14.



Step6:   Let it simmer for another 5 mins till it thickens. If the soup is very thick for your liking then add little more stock.

Ingredients

  • 2 Tbsp Olive Oil
  • 1 Medium White / Red Onion,chopped
  • 5 Cloves Garlic,minced/grated
  • 1 Cup Carrot,sliced
  • 1/3 Cup Celery,sliced
  • 1/2 Cup Crushed Tomatoes
  • 1/4 Cup Tomato Paste
  • 4 Cups Chicken / Vegetable Stock/ Broth
  • 1/2 Cup Red Kidney Beans,cooked,drained
  • 2 Tbsp Fresh Basil,chopped
  • 1 Cup Spinach
  • 1.5 Cup Cheese Tortellini
  • Salt and Pepper Powder as needed
  • 1/2 tsp Cayenne Pepper
  • 2 Bouillon
  • 1 Tbsp Sugar
  • 1/4 Cup Shredded Parmesan
  • 1/2 tsp Basil dried
  • 1/2 tsp Parsley dried
  • 1/2 tsp Oregano dreid
