Comforting soup for the winter or even otherwise, when you are under the weather or not ,so easy to put together and so good! Best ever and easy Egg Drop Soup!
Soup is on the list now and very often theses days,its comforting and easy meal item you can have. Specially when the weather is cold,gloomy and many times when we are under the weather ,its so nice to have a bowl of comforting soup.I love making a variety of soups /stews and some comforting chili for dinner these days and its so satisfying that I don't feel like munching on anything else after that.
This egg drop soup is my favorite since a very long time,because its simple,flavorful and comforting , all at the same time.
This soup is not fancy,not does it takes a lot of ingredients but so flavorful that no matter water you will ask for seconds.
This is also very HIT among kids as they do not have to munch on a lot of veggies in this soup and yet they will lick the bowls.

Very easy and delicious Egg Drop Soup!
Ingredients
- 2 Eggs
- 1 tbsp Olive Oil
- 1 tsp Ginger,chopped
- 1 tsp Garlic,chopped
- 1/2 tsp Thai Chili Pepper,chopped
- 2 Sprigs,Spring Onion,chopped,whites and greens separated
- 3 Cups,Chicken Stock
- As per need Salt
- 1 tsp Distilled White Vinegar
- 1 tbsp Soy Sauce
- 1 tsp Black Pepper Powder
- 1 tbsp CornStarch
- 1 Chicken Bouillion
- For Garnish
- Fried Noodles
Instructions
- In a bowl,add eggs and whisk them well.
Make sure there are no lumps. - In a sauce pan,add oil and when its hot,add ginger,garlic,chili pepper,spring onion whites and fry for some time.
Add chicken stock,salt,pepper powder,vinegar,soy sauce and bouillon.
Cook for some time.
Mix cornstarch in little water and add to soup. - Now,reduce the heat and slowly drop the egg in a continuous stream and stir in continuous motion.
Cook on lowest flame for 2 mins and switch off the heat.
Garnish with spring onion greens and fried noodles.
serve hot!

Some Tips / Tricks/ Alterations:
- If you do not find chicken stock then instead using Chicken Bouillion to water is enough to get the flavor.
- Adjust the Chili Peppers as per personal tolerance of spice level.
- I have used broad Thai Noodles.I have cooked the noodles as per the package instructions and then deep fried them.
- You can alternatively used store bought Fried Noodles.
- If you do not find Bouillion then skip it and go ahead with soup with remaining ingredients. The flavor wont change much.
