One of our favorite comforting meals is a one-pot chicken stew, full of flavor with spices, chicken chunks, and vegetables and delicious broth make this chicken stew the best meal you can plan.

Soup season is here and we all are looking for some comforting meal ideas to warm up the cool nights. This stew is just a one-pot meal that has vegetables with chunks of browned chicken, spices, to make the delicious broth.

What Is Chicken Stew?

Stew is a complete meal in a bowl with chicken, vegetables, and spices together in a thick broth, served on side of crusty bread to wipe it.
This is much similar to soup but stew has the broth that is more gravy-like full of spices.

How Do You Flavor Chicken Stew? What Spices To Add To Chicken Stew?

To get the best flavors in the chicken stew recipe you will need the following ingredients to give that cozy comforting deliciousness in your bowl:
  • Garlic 
  • Bay Leaves
  • Parsley
  • Chicken Stock
  • Salt & Pepper
  • Turmeric Powder
  • Thyme

How To Make Chicken Stew?

Step1:   Start preparing the stew by first browning the chicken. In a stockpot/dutch oven, add 1 Tbsp butter and chicken with salt. Brown the chicken on medium to high heat till the chicken looks caramelized. Take it on a plate and keep it aside.

Step2:  Next add the remaining butter and add garlic, onion, carrots, potatoes, salt, bay leaf, thyme, pepper, turmeric, and stir fry for some time.

Step3:    Add flour to the pan and stir well till the raw smell of flour vanishes.

Step4:    Add chicken and stock to the pan and mix well. Cover and cook for 20mins on medium heat.

Step5:     Once the vegetables are tender, check for salt and seasonings to be added. Remove bay leaf, add parsley and stir well.

Step6:    Check for desired thickness of the stew or keep cooking for some more time till the desired thickness is achieved. Serve with chopped parsley.

How To Thicken Chicken Stew?

To thicken the chicken stew adding flour to the stew works best, as it works well when the stew is frozen too.

Adding cornstarch mixed with water to the stew would also work fine but if you want to prepare a large pot and freeze then flour works better.

Also, adding some potatoes pureed to the stew work very well to thicken the stew.

Can You Freeze Chicken Stew?

Yes! Freeze the stew in portions for easy use. Just thaw the portions you need and leave the rest in the refrigerator.

Chicken stew lasts in the fridge in an airtight container for up to 5days.

What Kind Of Chicken Works Best For Stew?

You can use chicken breast, chicken thigh, or even store-bought rotisserie chicken to make this stew.

  2. Adding vegetables to stew is as per your choice. You can add mushrooms for earthy taste, also you can add broccoli or bell peppers.
  3. Also to make the stew more flavorful you can add some cumin powder and coriander powder to stew.
  4. If you like creamier soups and stews then instead of flour you can add heavy cream to stew to make it creamy.

Ingredients

  • 1.5lb/680Grams approx. Chicken, breast meat/ thigh meat, boneless, skinless
  • 2 Tbsp Butter
  • 2 Carrots, cubed/ chunks
  • 1/2lb/227Grams approx. Baby potatoes, quartered, with skin
  • 1 Medium Red Onion, diced
  • 6 Garlic cloves, minced
  • 5 Cups Chicken Stock, low sodium
  • 2 Tbsp All Purpose Flour
  • 2 Bay Leaves, dried
  • 1/4 Cup Fresh Parsley, chopped
  • Salt and Pepper Powder as needed
  • 1/2tsp Turmeric Powder
  • 1 tsp Thyme, dried

Instructions
