One Pot Lasagna Soup
Lasagna Soup Ingredients:
- Ground Chicken: In this recipe I have used ground chicken but you can use meat/protein of your choice.Ground beef would work equally fabulous.
- Vegetables of your choice: Use the veggies of your choice.I have used tomatoes,onion,garlic,ginger,bell peppers in this recipe but you can add even sweet potato,zucchini,beans plus whichever vegetable you like.
- Broth / Stock: Use unsalted vegetable or chicken broth in this recipe.
- Lasagna Noodles / Pasta: Lasagna soup calls for lasagna noodles.
- Cheese Mix: In this recipe I have used mozzarella , parmesan and ricotta combination.
- Spices: Spices used in this recipe are basil ,oregano, thyme,rosemary,ground pepper plus fresh basil.
How To Make Easy Lasagna Soup?
Step1: In a soup pot/ deep casserole/stock pot,add oil, further add onion chopped,minced garlic,minced ginger- saute for some time till onion is soft.
Step2: Add mined chicken and saute further till the chicken is cooked.
Step3: Add bell peppers and fresh basil - saute for some time till its soft.
Step4: Add crushed tomatoes,tomato paste,spices,chopped basil,sugar,salt and ground pepper powder and stock.
Mix well and let it cook for some time 10 mins.
Step5: Next add the lasagna noodles.Break each noodle into pieces and add to the soup.
Let it cook for 2 to 5 mins till noodles are cooked.
Step6: At this stage you can add the mozzarella and parmesan or mix with ricotta and add further when serving the soup.
On low heat cook the soup for a few minutes and mix well.
Step7: Once the soup is cooked well check for consistency.If you feel the soup is thick then add some more stock.
Serve with ricotta or mix all the cheese types and serve on top.
Lasagna Soup Variations
- Vegetable Lasagna Soup: Add more veggies in place of minced meat. Also use vegetable stock instead of chicken or beef broth to cook the soup.
- Cheese Lasagna Soup: Add more mozzarella, parmesan and cheddar to make this soup more cheesy.
- Beef Lasagna Soup: Add beef instead of chicken in this recipe.
Freezing Lasagna Soup
You can freeze the soup. But before you consume it,let it thaw in refrigerator section before heating the soup.
If you want to freeze the soup then leave out the lasagna noodles and cheese from the soup as when you are reheating the noodles and cheese will separate so its better to leave them out.
You can start heating the soup once thawed in the refrigerator section and add the lasagna noodles and cook for some time adjusting the stock and spices in the soup.
Finally add the cheese to soup,mix well and serve.

- 1 Large Onion,chopped
- 4 Cloves Garlic,minced/grated
- 1/2 Inch Ginger,grated
- 1 Cup Crushed Tomatoes
- 1/2 Cup Tomato Paste
- 1/4 Cup Red Bell Pepper,chopped
- 1/4 Cup Green Bell Pepper,chopped
- 3 Cup Chicken Stock
- 1/2 Tbsp Brown Sugar
- 1.5 Tbsp Basil,chopped
- 1 tsp Dried Basil
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1/2 tsp Dried Rosemary
- Salt and Ground Pepper as per need
- 3 Sheets of Lasagna Noodles,broken
