- Lemon Juice
- Garlic

- Chicken Stock/ Vegetable Stock
- Orzo
- Chicken
- Choice of veggies(Onion,carrot,celery,spinach)
How to make easy chicken orzo soup?
Step1: In a dutch oven/pot, add oil, when the oil is hot, add garlic, onion, carrot, and saute till onion turns soft.
Add flour and saute further. Make sure the flour does not burn.
Next, add the stock and mix everything well.
Step3: Let it come to boil then add the spices, chicken, orzo, and mix well.
Cover the pan and let it simmer for 10 mins or a little more till the pasta is cooked.
Mix once or twice to make sure the pasta does not stick to the bottom of the pan.

- If you leave orzo in soup for a long time before serving, then the pasta will drink all the liquid of the soup. So you will have to adjust the stock/broth in soup accordingly.
- If you are adding rotisserie chicken by shredding or any precooked chicken by shredding, then add the chicken and orzo to the soup at the same time and do not overcook the pasta and chicken.
- Keep a watch on salt added in soup by opting for unsalted broth/stock.
- You can substitute for orzo in this soup with Acini Di Pepe, Arborio, Couscous, Quinoa. These options work well as substitutes for orzo.
- This soup freezes well. f you wish to freeze this soup then do not add orzo to the soup when you freeze the soup, instead, add orzo after you have thawed the soup and give the soup a boil with orzo.

- 1.5 Cup Chicken, cooked, shredded
- 3/4 Cup Orzo, uncooked
- 2 Tbsp Olive Oil
- 1 Onion, small, chopped
- 2 Celery, stalks, diced
- 2 Carrot, small, chopped
- 3 Garlic Cloves, chopped/minced
- 1/2 Cup Spinach
- 1/2 tsp Sugar
- 2.5 Tbsp Flour
- Salt and Black Pepper Powder
- 3.5 Cup Chicken Broth
- 1.5 tsp Italian seasoning
- 1 Tbsp Lemon Juice
- 1.5 tsp Parsley,dried
Instructions
- In a dutch oven/pot, add oil, when the oil is hot, add garlic, onion, carrot, celery and saute till the veggies are soft.
- Add flour and saute on low flame.
- Make sure the flour does not burn.
- Next, add the stock and let it come to a boil.
- Add chicken, orzo and mix well. Cover the pot and let it simmer for 10mins.
- Once a while stirring the soup to make sure the orzo does not stick to the bottom of the pot.
- Add lemon juice, spinach, and parsley and mix again.
- Cook further for another 5mins.
- Serve the soup while its warm.
