Pad Thai Noodles (Easy Pad Thai)


Spicy good and easy recipe of Pad Thai Noodles (Easy Pad Thai)! This recipe is very easy to put together,great for weeknights and weekend quick lunch fix!


Spicy noodles are always on my list when I need to quick fix dinner/lunch on weekdays or even on lazy weekends.
Mostly my weekends are never relaxed,but on the contrary ,more hectic and full with scheduled tasks  to complete.This recipe is super hit at my place as its quick,hassle-free and spicy,just like from restaurants. My version of Pad Thai is a spicier one,but you can always use the spicy ingredients in moderation and use.

What are the ingredients?
  • Pad Thai Rice Noodles: These are flat broad rice noodles. Usually there is no need to precook them.As per package instructions,decide whether to cook them or just to soak them in water. I had soaked them for 15 mins in cold water before using them in noodles.
  • Fish Sauce: This is the essential sauce to add that necessary flavor to the noodles.  If you want to skip this then try alternating with Oyster sauce if you wish.
  • Sambal Oelek : This chili paste gives great zing to the flavor.But it is totally replaceable with any brand of chili sauce you prefer.
  • Chili Vinegar: Another ingredient which will give that extra punch to the entire dish. Replace it if you have to buy it specially for this recipe with Distilled White Vinegar/ Rice Vinegar.
  • Brown Sugar: I like brown sugar as it is healthier than cane white sugar.But you are at liberty to choose what you want to use in this recipe.
  • Peanuts: Peanuts for me is an essential ingredient in any Thai recipe, specially the noodles. So if you are having allergies then skip it but add it if that's allowed in your diet.
  • Tamarind Paste: The Pad Thai which I had tasted had tamarind in the sauce to taste,but again you can skip it as per personal choice.

Here are the steps of Pad Thai:

1. Soak noodles in water for 15 - 20 mins. Drain them just before using them in recipe.
2. Stir fry veggies,and when they are crisp, move the veggies to the side of pan. Add the egg mix,saute for few second and immediately add noodles and sauce mix.
3. Toss everything well to coat the noodles well.
4. Stir fry for some time and serve with lime juice and crushed peanuts.

Instructions

  1. Prepare the noodles as per package instructions.
    I had soaked the noodles for 15 minutes in cold water and drained them completely just before adding to the dish.
  2. In a mixing bowl,add all the ingredients mentioned for sauce.
    Mix well and keep aside.
    In another bowl,whisk egg with little salt and keep aside.
  3. In a pan/wok/skillet,add oil and add all the veggies in order.
    Toss well.
    Adjust salt so that veggies don't remain bland.
    Move the veggies to one corner of the pan,add the egg mix and toss well with the veggies.
    Immediately add the noodles and sauce mix.
    Toss further till noodles cook for few minutes.
  4. Squeeze lime juice,add peanuts and cilantro.
    Mix well and serve immediately.
    Make sure you do not cook the noodles for longer or they will turn sticky.
    Enjoy these noodles hot!

Cook time: 00:10:00 mins.
