What can be better than an exciting, crispy shrimp appetizer? If you love to have something fancy and restaurant-style dish to impress your guests then this recipe of coconut shrimp is what you need, plus it's baked, so it is healthy and can be ready in under 30mins.

If you want to prep and keep shrimp ahead, then bread the shrimp and refrigerate them till it is time to fry or bake them.

What ingredients do you need for Coconut Shrimp?

This delicious and easy shrimp needs a few basic ingredients available in your pantry to make this easy coconut shrimp recipe.

Following are the ingredients you need to make this:
  • Shrimp (Large) - use preferably fresh, cleaned, peeled, and deveined with tails left on
  • Eggs
  • All-Purpose Flour
  • Garlic Powder
  • Salt
  • Black Pepper Powder
  • Paprika
  • Panko Breadcrumbs
  • Coconut Flakes

How to make Coconut Shrimp?

To make this easy and crispy coconut shrimp follow these easy steps:

Step1:  Arrange 3 bowls.
In the first bowl whisk eggs with salt, and keep this aside.

Step2:  In the second bowl, dry mix flour, salt, pepper powder, garlic powder, and paprika.

Step3:   In the third bowl, add panko and coconut flakes and mix well.

Step4:   Apply salt to shrimp and dip each shrimp in the flour mix. Shake off extra flour.

Next, dip the shrimp in an egg mixture, and finally dredge each shrimp in panko and coconut flakes mix, lightly pressing to coat the shrimp with the mix.

Arrange the shrimp on a tray ready to either bake/ deep-fry or skillet fry them.

Step5:   I have skillet fried shrimp in this recipe but deep fry or baking works equally well.

Add oil to the pan and let it get hot. Once the oil is hot arrange the shrimp on the skillet.

Let the shrimp cook on one side then turn the shrimp on another side to ensure even cooking. Once all the shrimp are cooked serve with coconut shrimp dipping sauce.

Step6:   Garnish with chopped cilantro and red chili flakes.

What kind of shrimp to use?

The best shrimp to use for this recipe is fresh raw large, cleaned shrimp. Peeled and deveined shrimp is best to reduce time in making this recipe.

If you are using pre-cooked frozen shrimp then it would work too. But for the best taste use fresh raw shrimp.

How to bread shrimp?

To bread shrimp, you have simply dip each shrimp in flour with spices mix, then shake off the excess flour mixture. Further, dip the shrimp in the egg mix and finally dredge each shrimp in panko and coconut flakes mix.

Can I freeze the shrimp after prepping?

Yes. After breading shrimp you can arrange them on a tray and refrigerate them till you are ready to bake or fry them.

This will help to keep the breading intact. If you coat the shrimp with panko and coconut and immediately fry them, there is a chance that the bready might fall off the shrimp.

The sauce for coconut shrimp is very easy to make plus very quick to fix. Here I have mixed Thai sweet chili sauce along with fruit preserves. I have used pineapple preserve here in this recipe.

Shrimp
  • 1 lb/ 25 Approx. Large Shrimp, raw, fresh, peeled, deveined,tail-on
  • 1/4 tsp Salt
For Egg Mixture:
  • 2 Eggs + 1/4tsp Salt
For Flour Mix:
  • 1/2 Cup All-Purpose Flour
  • 1/2tsp Garlic Powder
  • 1 tsp Salt
  • 1/4tsp Black Pepper Powder
  • 1/2tsp Paprika
For Garnish:
  • Cilantro, chopped
  • Red Chili Flakes
For Coconut Shrimp Dipping Sauce:
  • 1/4 Cup Thai Sweet Chili Sauce
  • 1/4 Cup Pineapple Preserves/Jam
