This Chinese fried rice is very straightforward, easy, and totally under 30 mins and better than takeout - you are going to keep this on your menu rotation!


These fried rice ingredients are pretty common and if you love to cook Chinese food/ takeout menu dishes at home then the ingredients are going to be in your pantry without a problem.


It turned out amazing and so good that we did not have any leftovers plus now I don't order any more fried rice from restaurants!

This recipe is very easy and so much better than takeout, but still so delicious and quick to help with your dinner.


What is fried rice?

Fried rice is a Chinese takeout menu/restaurant dish in which rice is prepared by stir-frying the rice with veggies, chicken or shrimp, or any meat your choice with egg and sauce.


What kind of chicken for stir-frying?

I have used boneless, skinless chicken breast meat but the more famous choice would be thigh meat, it's juicier and does not get hard when overcooked like breast meat.

1.  Which oil should I use for fried rice?

Chinese cooking is usually done with sesame oil. I have used sesame oil in most of my Chinese food recipes, but if you do not like the nutty flavor that sesame oil has then you can use vegetable oil too.


2.  Do you have to cool rice before frying?

To get the restaurant-style texture and flavor to the rice, it also needs to be tossed along with egg, veggies, and chicken on high heat and to attain that using refrigerated rice does the trick.


3.  What kind of rice do Chinese restaurants use for fried rice?

Most Chinese cuisine is done with Jasmine rice but you can also use long grain basmati rice too to make this fried rice recipe.


4.  How to reheat the chicken fried rice? 

You can reheat the fried rice in Microwave or in a pan too. I normally reheat in the microwave but if you want to use pan/skillet/wok then apply little oil to pan then heat the pan, add the fried rice and start to quickly toss it on heat. 

There are chances that the rice will stick to pan/wok if you reheat this way so a better option is to microwave it.


5.  What do you serve with chicken fried rice?

How to make better than takeout chicken fried rice:

Step1:  In a bowl add eggs, salt, and water, whisk well. Next, marinate chicken with salt and 1 Tbsp sauce.

Step2:  Add butter to the pan, when it's hot add the whisked eggs and scramble the eggs. Once this is done keep this aside.

Step3: Add butter and sesame oil to the pan, and when it's hot, add the veggies one by one and saute for a while.

Move the veggies to one part of the pan, and add the chicken, saute further till chicken is cooked well. Mix everything well.
Further, add scrambled eggs.

Step4:   Add peas to the pan, next add rice and sauce. Mix everything very well, adjust salt. Finally, add spring onion greens.

Tips to make authentic fried rice:

  • Use cooked refrigerated rice:  The texture of restaurant-style fried rice is achieved when we use cold rice. 
  • There will be lumps formed as its cold, of the previous night. Separate the rice and then use it in the recipe.
  • Use Butter:  Butter gives that amazing taste in Chinese fried rice like restaurants. In addition to sesame oil  use butter.
  • Cook on high heat:  To get the restaurant style smell and texture to the dish, toss the veggies, chicken, and rice on high heat. 
  • If you want to add shredded chicken, then boil and shred chicken at home or use store-bought rotisserie chicken. Either way, it works.
  • You can use a stand mixer or hand mixer to shred chicken too.

Ingredients:

For Sauce:
  • 2 Tbsp Light Soy Sauce
  • 1 Tbsp Dark Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 tsp Sugar
  • 1 Tbsp Sriracha
  • 1 Tbsp White Vinegar
For Fried Rice:
  • 2 Cups Cooked Rice
  • 1/2 Cup Chicken, cut into 1/2 inch chunks
  • 2 Eggs, large, raw + a generous pinch of salt + 1 Tbsp Water
  • 3 Tbsp Butter
  • 2 Tbsp Sesame Oil
  • 1/2 Tbsp Ginger, grated
  • 1/2 Tbsp Garlic, grated
  • 2 Sprigs Spring Onion, whites and greens chopped, separated
  • 1/4 cup Green Bell Pepper, chopped
  • 1/4 Cup Carrot, chopped
  • 1/3 Cup Cabbage, shredded
  • 1/4 Cup Frozen Green Peas

Instructions:

Make sauce:
  1. In a bowl/cup add all the ingredients for sauce such as light soy sauce, dark soy sauce, sugar, oyster sauce, vinegar, and sriracha.
  2. Mix well.
Make fried rice:
  1. In a bowl add eggs, salt, and water, and whisk well.
  2. In a bowl add chicken pieces, salt, and 1 Tbsp sauce. Mix well.
  3. In a pan add 2 Tbsp butter and when it melts, add the whisked eggs and scramble the eggs.
  4. Keep this aside.
  5. In the pan, add butter and sesame oil, add the veggies one by one and saute till the veggies get slightly soft.
  6. Move this to one side of the pan, add chicken and saute, and let it cook. Mix everything.
  7. Add scrambled eggs, peas, rice, and finally the sauce. Toss everything well on high heat, adjust salt, and further toss well till the fried rice is cooked well.
  8. Serve with chopped spring onion greens.

Notes:
