Shrimp Udon is my favorite dinner fix these days as it's very quick, easy to fix, and ready under 30mins!

Yaki Udon is a Japanese stir fry dish made with thick chewy udon noodles, vegetables, protein of your choice, and savory sauce.The sauce for this udon noodle stir fry is very simple to make and very delicious.
What Are The Recipe Ingredients for Udon Stir Fry?
These are the ingredients to make this recipe of Udon Shrimp:- Udon Noodles
- Shrimp
- Vegetables(Mushrooms, Carrot, Cabbage, Scallions)
- Sauce(Oyster Sauce, Dark Soy Sauce, Chili Oil, Rice Vinegar, Brown Sugar, Black Pepper Powder, Salt, Water)
Type Of Udon Noodles
Udon noodles are available in a variety of ways - dried, fresh, or frozen noodles.I have used the dried noodles, in which, add the noodles to boiling water. When the noodles are cooked almost 70%, drain the water and toss the noodles with little to avoid them from sticking together.
Fresh udon tastes better than dried but I could not find fresh one's this time, so I have used dried ones.
Do not overcook the udon as they get very mushy very fast. Toss noodles with little oil and keep them aside.
Step2: Prepare Sauce. In a cup add the ingredients for the udon stir fry sauce, mix well and keep aside.
Step3: Stir Fry Vegetables. In a pan add oil and let it get hot, then add cabbage, mushroom, carrots, onion, one by one and stir for 2mins till the vegetables are soft. Keep this aside.
Step4: Cook Shrimp. In the same pan, add shrimp and cook till the shrimp is no longer pink.
Step5: Put Everything Together. Add cooked vegetables, udon, and toss on high heat for a minute.
Step6: Serve. Add sauce and toss everything well to coat the sauce evenly. Serve while warm.

Step1: Cook Udon. Boil and cook the Udon Noodles as per package instructions. Drain and rinse the noodles with cold water.Do not overcook the udon as they get very mushy very fast. Toss noodles with little oil and keep them aside.
Step2: Prepare Sauce. In a cup add the ingredients for the udon stir fry sauce, mix well and keep aside.
Step4: Cook Shrimp. In the same pan, add shrimp and cook till the shrimp is no longer pink.
Step5: Put Everything Together. Add cooked vegetables, udon, and toss on high heat for a minute.
Tips To make Shrimp Udon Noodles:
- Try using fresh udon or frozen vacuum-packed udon for this recipe as it gives the best texture. I have used dried udon as I could not get it in the stores.
- Drizzle some oil into the udon after boiling the noodles to avoid the noodles from sticking together.
- Dark soy sauce used in this recipe is perfect for dark color to the recipe. But if you can't find it then regular soy sauce is fine too.
- Using a large wok will work best to make this recipe.
- Prep the recipe before you start to cook that will save a lot of time and the dish will be quick.
- Do not overcook shrimp as it gets rubbery.
- If you do not like spice in your food then reduce the chili oil or entirely skip it.
- You can use mirin instead of rice vinegar.
