This homemade pineapple fried rice may or may not be authentic but surely is the best pineapple fried rice recipe that you have tried. Thai pineapple fried rice is loaded with cashews too which makes this very amazing too.

Thai pineapple fried rice is better than any restaurant and ready under 30mins or less. You are going to love the umami flavors plus the pineapple chunks, eggs, and shrimp along with cashews, which together make this rice dish so amazing.


Thai food is LOVE and every weekend making a trip to either a Chinese or Thai restaurant for dine-in or take-out has been a routine.


This recipe of pineapple fried rice is nothing but a party of flavors in your mouth - it has pineapple, shrimp, veggies, cashews, and fish sauce(Thai specialty sauce) added which is normally not added in Chinese fried rice recipe.

The best thing about making this pineapple fried rice recipe is that it needs only one pan/skillet/wok to make this quick dinner fix. 

Thai food used fish sauce in the recipe which is mostly not used in Chinese food and that is the basic difference between Chinese fried rice and Thai fried rice. Apart from this, you can add curry powder to this recipe which I have not used.


The best rice in Thai fried rice usually fragrant Jasmine rice, but I have used Indian/Asian Basmati rice which is equally fragrant and quick to cook.


What ingredients are in this pineapple fried rice?

The recipe of this fried rice calls for the following basic ingredients which most Thai recipes call for:
  • Jasmine/Basmati Rice
  • Pineapple:  You can use fresh or canned pineapple in this recipe but fresh pineapple gives the best flavors compared to canned. But also canned will reduce the prep time as well.
  • Shrimp/Eggs:  You can use shrimp and eggs in this recipe or totally skip them to make the recipe vegetarian. You can also add chicken if you like.
  • Fish Sauce/Oyster Sauce:  In this recipe, I have used a sauce mix made of different ingredients. But the important sauces of Thai food are a combination of fish sauce and oyster sauce. I have also added soy sauce, sriracha, brown sugar to add an extra depth of flavor.
  • Vegetables/Cashews:  Usually carrot, bell peppers, peas go very well with Thai flavors. Also, the addition of cashew is a brilliant addition that makes the fried rice very flavorful.

Tip's to make the easy homemade pineapple fried rice:

  • Use cooked cold rice:  Cold rice is perfect for making best-fried rice. The best way is to cook rice and refrigerate overnight, this way the rice does not clump, and the rice when hits the pan/wok does not turn soggy.
  • Umami flavors:  In Thai food adding some soy sauce is perfectly fine but the best Thai flavors come by adding fish sauce, oyster sauce, Thai curry powder, and palm sugar. Along with this Jasmine rice is a perfect choice but if you can't find these then use Basmati rice, which is perfect for Asian cooking. In this recipe, I have skipped curry powder, palm sugar, and jasmine rice but you can add as it pleases you.
  • Prep everything well ahead:  To get the fried rice ready quickly the best thing to do is prep everything and keep ready before all the ingredients hit the wok.
  • High heat works:  Cooking fried rice is perfectly like a restaurant when cooked tossing it continuously on high heat. 
  • Fresh pineapple v/s canned pineapple:   Fresh pineapple works best for recipes compared to canned one. The acidity required for this fried rice recipe is right with fresh compared to canned.
  • Freezes well:   This rice freezes well when stored in freezer-safe containers or Ziploc bags. Do not freeze the rice with shrimp if you are using shrimp in your fried rice. Cooked shrimp when frozen won't be tasting good when thawed.

How do you make Thai pineapple fried rice from scratch?

Step1:   In a cup mix together soy sauce, fish sauce, oyster sauce, brown sugar, black pepper powder, and sriracha.

Step2:   In a mixing bowl add shrimp and 1 tbsp sauce mix and mix well. Keep this aside.

Step3:   In a wok, add 1 Tbsp butter and 1 tbsp oil and let it get hot. Add shrimp to the wok and let the shrimp cook turning periodically the shrimp to evenly cook on another side.

:   Keep the shrimp aside. In the same wok add remaining butter, and add whisked eggs and saute till the eggs are scrambled. Keep this aside.

Step5:   In the same wok, add oil, and when it's hot add ginger and garlic, saute till it's soft. Next, add carrot, green peas, bell pepper, onion, and cook till soft.

Next add scrambled eggs, shrimp, and cashews. Saute further.

Step6:   Add rice to the wok and add sauce mix. On high heat keep tossing the contents of the wok till the rice, sauce, and vegetables are mixed well and coated with sauce mix well. 

Finally, add pineapple chunks and toss everything further and adjust salt. Finally, garnish with spring onion greens, sesame seeds and serve while warm.

Ingredients

For Sauce:
  • 1.5 Tbsp Fish Sauce
  • 1 Tbsp Oyster Sauce
  • 1.5 Tbsp Soy Sauce

  • 1/2 Tbsp Sriracha
For Shrimp:
  • 10 Shrimp, medium/small,deveined
  • As needed Salt
  • 1/2 Tbsp Sauce Mix

For Fried Rice:
  • 2 Cup Basmati/Jasmine Rice, cooked, cooled
  • 2 Eggs, whisked
  • 1 Cup Pineapple, fresh, cut into chunks
  • 2 Tbsp Vegetable Oil
  • 2 Tbsp Butter
  • 2 Garlic cloves, minced
  • 2 tsp Ginger, grated
  • 2 Thai Chilis,chopped(optional)
  • 1/4Cup Green Peas, frozen
  • 1/4Cup Carrot, chopped
  • 1 Red Onion, small, chopped
  • 1/4Cup Red Bell Pepper, chopped
  • 1 Stalk Spring Onion, chopped
  • 1/3 Cup Cashews, raw
  • Sesame Seeds for garnish

Instructions
