- Chicken breast meat,cut into small pieces (Thigh meat would work great too)
- Whole roasted cashews,unsalted
- Sauce Mix (Chicken stock,soy sauce,Hoisin Sauce, Oyster Sauce, Sugar, Ketchup,Rice Vinegar, Chili Garlic Sauce,Sriracha)
- Sesame Seeds and Spring Onions for garnish

- You can roast cashews in a pan/ or in a skillet on direct flame/heat. Keep tossing the chicken pieces till roasted well and crunchy.
- You can alternatively arrange the cashews in a baking sheet / pan and roast them in oven till done at 350 f / 177 c. Spray some coconut oil and keep turning them till they are crisp.

How To Make Cashew Chicken Stir-Fry
- In a bowl add the chicken pieces with sesame oil,baking soda,cornstarch,black pepper powder and 1 tbsp of sauce mix. Mix well.
- In a pan add sesame and vegetable oil,when its hot,add the chicken and quickly stir fry till cooked.
- In a the same pan,add ginger,garlic,onion and stir-fry till soft and cooked.
- Add the sauce mix and let it cook it slightly reduced.
- Next add the chicken pieces to the sauce and mix well to coat the chicken with sauce mix.
- Next add the roasted cashews and toss them well with chicken.
- Finally add the sesame seeds and spring onion.

DeletePrinting comes out on 16 pages. This website is absolutely the worst. The meal was delicious once we copied the recipe out to Word and reorganized it to flow correctly. We printed it at that point and it was just 2 pages.

DeleteCan I just makena comment for constructive criticism. The instructions and the way they are set up are very difficult. Especially for us moms trying to cook while reading this. You have to go up and down for measurements and directions instead of it all being pieced together. It's really a pain and takes a lot of time . It would be nice if, at the end of the article, the ingredients were listed and directions included each ingredient instead of "sauce mix" and "ingredients listed above"

DeleteFirst: This was the most delicious chicken cashew I have ever eaten and made, kudos to the writer! Yes, I agreed with the above comments that it was hard to assemble, going up and down. But putting that aside, I decided to make a heap of this sauce and freeze it for every use. And once you make a recipe, it's quite easy to remember the steps. Thank you for this recipe, it's our weekly go-to meal!

ReplyDeleteAMAZING DISH but I agree with the others comments above! Here are my suggestions!!! Make sauce mix first! Let it sit while you roast the cashews and make the chicken! I did not add the sauce mix into the chicken until the end. I have no idea why it says it and honestly in the pictures the chicken doesn't look like it has the sauce mixed in! After my chicken was done I removed it from the pan, then cooked the ginger, garlic and onions. After that was cooked, I added the chicken back to the pan and added the sauce! let cook for 2-3 mins. Added all the other ingredients and there you go! Delish!
