A new post for quick and yummy gravy recipe...Aloo Methi Masala!
These days I have developed craze of Methi/Fenugreek Vegetable, I get it every week and prepare lot of varieties with it.

This time I thought of making nice fagrant gravy with methi and added Aloo/ Potatoes with it.
This gravy was a big hit at home and enjoyed by everyone with hot and fluffy pooris.

Aloo Methi Masala
Ingredients
- 2 Medium Potatoes,peeled,cubed,boiled
- 1 Cup Fenugreek Leaves,chopped
- 1 Medium Onion,cubed
- 1 Medium Tomato,cubed,deseeded
- To make Paste:
- 1 Small Onion,long cut
- 4 Tablespoons Grated Coconut
- 4 Byadgi Chillies
- 6 Black Peppercorns
- 1 Teaspoon Poppy Seeds
- 1 Teaspoon Turmeric Powder
- 4 Cloves
- 1 Cinnamon Stick,1"
- Oil as per need
- 4 sprigs Cilantro,chopped
- Salt as per taste
- 1 Teaspoon Sugar
- 1 Cup Water
- 1 Teaspoon Red Chilli Powder
- 1/2 Teaspoon Turmeric Powder(To add to boiling veggies)
- 1 Tablespoon Goda Masala / Malvani Masala/Any other Garam Masala/Pav Bhaji Masala/Misal Masala
- 1 Teaspoon Coriander Powder
Instructions
In a pan,add 2 tablespoons oil,when its hot,add onion long cut,grated coconut,byadgi chillies,black peppercorns,poppy seeds,turmeric powder,cloves,cinnamon stick.
Fry this till the grated coconut and onion turns brown.
When cooled grind this mixture to fine paste.Keep this aside.
Add around 2 tablespoons oil,when its hot,add onion and tomatoes and fry for a minute or two.
Add cubed and boiled potatoes,methi leaves chopped.
Fry for a minute.
Add water to this and let it cook.
Add to this Salt,sugar,1/2 teaspoon turmeric powder,red chilli powder,Goda Masala,coriander powder.
Cook it for a while.
After veggies are cooked,add the ground paste to it.
Mix well.
Add cilantro.
Serve hot with poori.
