My loved cookie since childhood...Nankatai!!
I have fond memories attached to this cookie. Every year, during school holidays I used to stay at my aunts place in Panaji and she used to pamper me with all kind of goodies, fish varieties :)
She used to bring me this Nankatai from Cafe Central, which is a very famous bakery/shop located in heart of Panaji. Their products are to die for...its a must to try if you are in Panajim!!
So, if you visit Goa , do visit this awesome place and try their Patties,cookies,cakes and other stuff which is super good!!
I used to wonder how they make such wonderful and melt in your mouth cookies. Always wanted to recreate that magic and I finally got that wonderful taste recreated!
I did multiple modifications to my original recipe of Nankatai which I had posted,just as an attempt to get it better than before.
Do try this recipe ,super easy,very basic and less ingredients and awesome outcome!
Ingredients:
- 1/2 Cup Ghee/Clarified Butter,not melted but flowing and thicker consistency
- 1 Cup Powdered Sugar
- 1 Cup Maida / All Purpose Flour
- 1/3rd Cup Gram Flour / Besan
- A pinch Salt
- 1 Teaspoon Cardamom Powder
Instructions:
- Preheat the oven at 350F or 180C.
- In a mixing bowl, add the ghee and sugar.
- Make sure the ghee is not fully melted or liquidy not it's to be scooped out.
- The right consistency of the ghee in this recipe is that its flowing but thicker.
- Beat for a minute so that sugar is dissolved.
- Sieve the maida and besan once.
- Add flour mixture,salt and cardamom powder to the ghee mixture.
- Mix well.
- No need to knead the flour.
- Just mix the dough with light hands.
- Keep aside the dough for 10 minutes.
- Line a baking tray with parchment paper.
- Pinch small dough balls ,roll them lightly on your palm.
- Make any design you prefer on cookie.
- Bake them for 20-25 minutes.
- Keep checking the cookies periodically so that they should not get burnt.
- Let them cool on cooling rack.
- Enjoy with a sip of tea!
Tips:
- In this recipe there is no soda used.
- No need knead the dough. Just mix it with soft hands.
