What is Mongolian Chicken? / Why it is called Mongolian Chicken/ What is Mongolian about this recipe?


This recipe of Mongolian Chicken Recipe is derived from the Mongolian Beef which is served in most Asian/Chinese-American Restaurants,specially P.F.Chang's.


Mongolian Chicken is made on similar lines to that of Mongolian Beef, just instead of Beef I have used Chicken.


Slice the Chicken breast or thigh meat into bite sized chunks, cooked along with scallions and also you can used red sweet onion and cooked in a sweet and savory sauce.


The recipe actually hails from Taiwan and it has nothing to do with Mongolia.


In 1950s the Japanese Style of cooking that is Teppanyaki was introduced. In this on a large,open,wide, surface meat and vegetables were stir-fried. 


This was similar to Mongolian barbecues,so may be the name "Mongolian"  was derived and associated with this recipe.

What are the ingredients of Mongolian Chicken Recipe?


Chicken:  I have used Chicken Breast meat,sliced to make bite sized pieces,if you like then make chunks/cubes too.

You can use thigh meat too also as that is juicy and soft compared to breast meat.


Sauce Mix: The sauce in this recipe is sweet and savory. The sauce is made of very few ingredients which are easily available in your pantry if you love cooking Chinese food.

Sauce contains main ingredients such as brown sugar,soy sauce,white vinegar and sriracha.


Scallion: This dish mainly contains only scallions/spring onion as the vegetable but you can add any vegetable of your choice like red sweet onion,mushroom,broccoli,red and green bell pepper,snap peas.

What is Mongolian Sauce made of?


Mongolian sauce is sweet and savory in taste and made of very basic ingredients.


Here are the list of ingredients used in the Mongolian Sauce:

  • Sesame Oil
  • Brown Sugar
  • Chicken Stock
  • Cornstarch 
  • Soy Sauce
  • White Vinegar
  • Sriracha




How to make / Steps to make Mongolian Chicken?


  • Firstly tenderize the chicken by marinating the chicken breast pieces/ thigh meat pieces,sliced,in soy sauce,cornstarch and 1 Tbsp oil.

  • Mix this well to coat the chicken pieces well and keep aside.

  • In a pan,add little oil and when its hot,add the chicken pieces and toss them well till cooked.Keep this aside.

  • In the same pan,add more oil and add grated/minced ginger and garlic,fry further till its fragrant. Make sure it does not burn.

  • Add the scallion white ,cut in 2 Inch long stalks. Toss further.

  • In a mixing bowl,add the ingredients for sauce mix and mix well.

  • Add this sauce mix to the pan,and let it come to a boil for few seconds.

  • Once it slightly thickens,add the chicken pieces,scallion greens cut into stalks,add any other veggies of your choice and toss further.

  • Check for the salt and serve immediately with rice.

Ingredients

  • 1.5 Cup Chicken Breast/ Thigh Meat,sliced in to bite sized chunks
  • For Marination:
  • 1 Tbsp Soy Sauce,Low Sodium
  • 1/2 Tbsp Cornstarch
  • 1 Tbsp Oil
  • Additional:
  • 2 Tbsp + 1 tsp Sesame oil / Vegetable Oil,divided
  • 1 Tbsp Ginger,minced
  • 1 Tbsp Garlic,minced
  • 4 Sprigs Scallions/ Spring Onion,whites and Greens cut approx. 2 Inch long
  • For Sauce Mix:
  • 1 tsp Sesame Oil
  • 1 Tbsp Brown Sugar
  • 1/3 Cup Chicken Stock,No-Sodium
  • 1 tsp Cornstarch mixed with 1 Tbsp Water
  • 4 Tbsp Soy Sauce,Low Sodium
  • 1 Tbsp White Vinegar
  • 1/2 Tbsp Sriracha

Instructions

  1. Cut and clean the chicken pieces. Make sure they are very dry.
    Tenderize by marinating the chicken with the ingredients mentioned.
    Keep this aside.
  2. In a pan add 2 Tbsp vegetable/sesame oil, when its hot,add the chicken pieces and toss well till the chicken is cooked.
    Keep this aside.
  3. In the same pan,add 1 tsp sesame oil and add minced ginger and garlic.
    Fry till its fragrant,do not burn it or the final dish will taste bitter.
  4. Meanwhile in a mixing bowl add all the ingredients for sauce,mix well and keep aside.
  5. In the pan, add the scallion white stalks,toss well.
    Next add the sauce mix.
  6. Let it boil till it slightly thickens.
    Add the chicken pieces,scallion greens and toss further.
  7. Either cook further till entire sauce dries or serve it immediately along with sauce.
    Serve with rice.

  • Use Chicken Breast meat or Chicken Thigh meat as per availability. Always tenderize the chicken, as that makes the chicken soft and juicy.
