Baking is in the air and the best season to bake the famous Christmas Shortbread Cookies! Who doesn't like the best ,melt in your mouth Shortbread cookies!


These cookies are my favorite along with the Indian Shortbread cookies-NankhataiNankhatai is equally good and they too melt in your mouth.Just try them.


This year I didn't bake any cake so I have decided to get the cakes from shops but I have earlier shared my favorite Christmas Fruit Cake recipe.Have you checked that?

Classic Shortbread Cookie Ingredients:


  • Butter

  • Sugar

  • Cornstarch

  • Flour

  • Vanilla

How Good Are These Shortbread Cookies And How Long They Stay Fresh?



These are one of the best cookies I have baked till date. 


No eggs,no baking powder or soda yet perfect crisp cookies and the texture just is so good that they will melt in your mouth.


They stay fresh if stored in an airtight container for more than 15 days.



How Long Do I Need To Bake Them?



The time of oven depends on how big is your oven.
Whether you bake in Microwave Convection Mode or in Cooking Range Convection oven. 


Plus depending on the size of cookie you cut the time will  vary. So adjust the oven time accordingly.


I waited till the top of the cookies were slightly golden brown.



Can Shortbread Cookies Be Frozen?


Yes! You can freeze the shortbread cookies in an airtight container or in a Ziploc bag with parchment paper arranged between layers to avoid sticking them to each other.



How To Store Shortbread Cookies?


You can store the shortbread cookies in an airtight container and they stay fresh and crisp for 15 days.



Why Do You Add Cornstarch To Shortbread Cookies?


Cornstarch adds a slight softness to cookie after baking it.So recipe calls for cornstarch and they are not at all chewy or very soft cookies.

The more you bake them till the cookies turn slight golden brown the final cooled cookie will be crispy.



Can Shortbread Cookies Be Made With Brown Sugar?


Adding brown sugar makes the final cookie chewy or soft,But the shortbread cookies need to be crispy and crunchy. So adding brown sugar to shortbread cookie is not a great idea.

How To Make Shortbread Cookies?


Step1:  Cream the butter till light and fluffy. Do not over whip it and allow lot of air to get in as shown in Picture 1.

Check the detailed recipe picture given below.



Step2:  Add sugar and whip further till sugar is mixed well as shown in picture 2.



Step3:  Next add vanilla,sifted flour and cornstarch and whisk till everything is mixed well.

Then next with hands make a dough ,do  not over knead the dough. Just with light hands knead it and cover with cling wrap and refrigerate for 30 mins as shown in picture 3, 4 and 5.


Step4:  Then roll into a 1/2 Inch thick rectangle and with cookie cutter,cut into desired shapes as shown in picture 6 and 7.

Bake at 325 F / 160 C for 15 to 20 minutes till the top is slight golden brown.


Cool completely before removing from the baking tray.

    Tips To Make The Classic Shortbread Cookies:



    • Do not over knead the dough. If the dough is dry them sprinkle little cold milk and make the dough.

    • Always chill the dough covered in a cling wrap to avoid the cookies spreading while baking.

    • These cookies are soft when baked,let them completely cool down to get the firm,crispy cookies.

    • To serve the frozen cookies always thaw in refrigerator section then keep them on kitchen counter finally to serve.You can optionally warm them up in oven for some time.

    • Adding salted butter avoids adding salt in dough which might not spread evenly in the dough.Salted butter adds salt evenly in dough.

    • Cream the butter well to begin with the recipe.Next add sugar and whisk - this makes the final cookies crispy and perfect.

    • You should be able to add rice flour instead of cornstarch too.So if you do not find cornstarch then adding rice flour should work well.

    Shortbread Cookies (Melt In Your Mouth)

    Ingredients

    • 1 Cup, Butter,softened,salted
    • 1/2 Cup,Powdered Sugar
    • 2 Cup,All Purpose Flour
    • 1/4 Cup,Corn Starch
    • 1 tsp,Vanilla

    Instructions

    1. In a bowl,add the softened butter and with a Hand Mixer,whisk till soft and fluffy.
      Add the powdered sugar and beat further till nicely mixed.
    2. Add the vanilla and the sifted flour and cornstarch,mix further on low speed till mixed well.
      With hands ,knead the dough till smooth.
      Cover with a Food Wrap and refrigerate for 30 mins.
    3. Preheat the oven at 325 F / 160 C.
      Roll the dough into a rectangle 1/2 Inch thick, and with a Cookie Cutter,cut the cookies into desired shape.
    4. Bake the cookies for 15 Mins or adjust as per individual oven temperatures,till the top is slightly golden brown.
      Cool them completely before taking them off from the Baking Tray.
      Store in a airtight container and serve as per wish.
    5. Enjoy!

    Prep Time: 00:40:00 mins.
    Cook time: 00:15:00 mins.

        1. Hi Jamie,no actually I haven't. usually they get over in no time but you can try freezing them arranged with a parchment paper in between so that they wont stick,wrapped in a plastic wrap then in a ziploc bag.They should be good to go.Thanks.
