Gajar Ki Burfi / Carrot Fudge

Wonderful festive sweet or even when you crave for some deliciousness in your life - make these awesome Carrot Fudge Bars/ Gajar Ki Burfi! Beautiful red carrot cooked and topped with delicious dry fruits !





A new post again and this time I am sharing another favorite category recipe,yes yes!dessert /sweet 🙂 I made these amazingly delicious Gajar ki Burfi /Carrot Fudge.

Gajar or Carrot Burfi is anther form of famous Gajar Halwa. I think anyone who has tasted Gajar Halwa,will not say no to it,so does Gajar Ki Burfi. Here the process is pretty straightforward,and depending on whether you want the halwa burfi to be soft or very hard and firm,cook the carrot mixture accordingly.

We are beginning to have all famous Indian festivals one after other, and this Gajar Ki Burfi,is perfect for upcoming Holi festival, Akshay Trutiya and also many more festivals including Diwali and Rakshabandhan! So do try these amazing burfi at home.

Here are some of the tips I would like to share:
  • Depending on whether you to make the burfi hard or soft,cook the carrot mixture accordingly.
  • If you want to make it hard and sliced well,then cook well it it leaves the sides of pan and easily comes together as a ball.
  • If you want it to be soft and gooey,then keep the mixture slightly soft and sticky.
  • Also,the sugar was more than enough for me,if you like to make it more sweet then increase sugar here.

Gajar Ki Burfi / Carrot Fudge
Wonderful festive sweet or even when you crave for some deliciousness in your life - make these awesome Carrot Fudge Bars/ Gajar Ki Burfi!
Ingredients
Instructions
Wash and peel the carrots.
Grate the carrots .
In a pan,add ghee,when it melts,add the carrots,grated.
Saute the carrots till soft and raw smell disappers.

To this add the milk powder and khova.
Mix well and let it cook.
This will mix everything well as mixture starts to cook.

Add sugar to this and let it cook on low flame.
Make sure the mixture does not stick to the pan and burn.
Keep stirring it regularly to avoid sticking.

After a while,it will dry up and start to form a ball and comes together.
To test this take a small portion,be careful here as the mixture will be hot and try to roll it in a ball.
If the mixture does not stick to your hands and rolls into a ball then its done.

Apply little ghee to a bowl,place parchment paper on it.
Spread the mixture in the bowl and try to make the top smooth with spatula.

Add the chopped,silvered dry fruits.
Let this cool completely.
You can also refrigerate this.
Once cooled make pieces as per choice and serve.
