A new yummy veggie post...Pumpkin Bharta / Kaddu Bharta!!
I have to figure out new ways to make my family eat vegetables,so in an effort to try something nice yet healthy too I come up with new recipes which would be loved by not only my family but by all.
After my last successful attempt to make Onion/Pyaz ka Bharta, this time I though lets try something with Pumpkin too.
I love some traditional pumpkin Goan recipes which my mom used to make for me. But Some of them involve dried fish to be added,so could not consume it on days, which we observe as vegetarian.
This is a very quick and easy to make recipe and liked by all.

Pumpkin Bharta
Ingredients
- A big piece of Pumpkin,mashed amounts to 2 Cups Pumpkin / Kaddu
- 2 Tablesspoons + 2 Tablespoons Oil
- 1/2 Teaspoon Mustard Seeds
- 2 Small Green Chillies,slit
- 1 Large Onion,finely chopped
- 1 Medium Tomato,finely chopped
- Salt as per taste
- 1 Teaspoon Sugar
- 1/2 Teaspoon Turmeric Powder
- 1 Teaspoon Kitchen King Masala
- 2 Sprigs Cilantro,finely chopped
- a Fistful Grated Coconut
- 1 Teaspoon Red Chilli Powder
Instructions
First,make pieces of pumpkin. Cut it in to cubes/squares.
Boil water in a saucepan and cook the pumpkin pieces with little salt till done.
Now,when cooled,scoop the pumpkin pulp,and discard the peel.
In a pan,add 2 tablespoons oil,when its hot,add mustard seeds.
When they splutter,add green chilies and mix well.
After some time,add onion and tomato.
Add little salt ,so that cooking gets faster.
Add sugar.
Stir well.
Add kitchen king masala and turmeric powder.
Cook for some time and switch off the gas.
Add the pumpkin pulp,grated coconut,adjust salt,red chilli powder and cilantro.
Mix well.
Drizzle 2 more tablespoons hot oil on top of that.
Serve hot with Pulkas or Roti!!

Tips:
- Try roasting cumin seeds and add its powder too. It will give nice aroma to the bharta.
- Serve always hot with Roti or Phulka.
- Adding hot oil on top of the bharta give nice texture to it and enhances the taste.
