Kung Pao Chicken

Had to make Kung Pao, as its one of my favorite sides and somehow had to figure out a way to make it at home.

This is a spicy stir fried dish, which goes with lots of veggies,chicken,peanuts and sauces.
You can have with noodles or fried rice or plain rice....whatever way pleases you!!

I drew inspiration for the recipe of Kung Pao from Food & Wine. and added a little bit of my changes to it.
My family loved my preparation.
Turned out good and not only that, it was scrumptious and its divine flavor beckons you!!

Kung Pao Chicken Chinese


  • 250 gms of Chicken,skinless & boneless, cubed
  • 4 Tbsp Soy Sauce
  • 2 Tbsp Hot Chili Sauce
  • 2 Tbsp Cornstarch
  • 4 Red Chillies, de-seeded
  • 2 Tbsp Sherry or White Wine (I didn't use this)
  • 2 Tbsp Sesame Oil
  • 1 tsp White Vinegar
  •  3 Tbsp Sugar
  • 2 cups Chicken Broth or Water
  • 1/2 Cup Peanuts
  • 4 Scallions, white Bulbs and Greens cut separately
  • 1 Red Bell Pepper, diced
  • 1 Medium Onion,diced
  • 1 Tbsp Garlic,chopped
  • 1 tsp Black Pepper powder
  • 2 Tbsp Vegetable oil
  • Salt as per taste

  • In a bowl, add 1 tbsp wine,1 tbsp soy sauce,1 tbsp sesame oil, 1/2 tbsp cornstarch and mix well.
  • Add chicken pieces (cleaned and washed) and salt to it.
  • Coat the chicken pieces well with this mixture and refrigerate for 15 mins.
  • Now, in a bowl, add 1 tbsp wine,3 tbsp soy sauce,1 tbsp sesame oil,1 & 1/2 tbsp cornstarch,chili sauce,vinegar,sugar and mix well. Keep it aside.
  • In a pan, add 1 tbsp oil and peanuts, fry them till they are brown. Keep aside.
  • In the same oil, add chicken pieces and fry till chicken is cooked 80%.
  • Keep on stirring the chicken continuously, so that it does not stick to the bottom of the pan.Keep it aside.
  • Now add remaining oil ,add red chillies and veggies, except scallion greens and garlic. Fry till they are crisp.keep aside.
  • To the same pan add sauce mix which you have prepared, add chicken broth or water, add garlic and let it cook for 5 mins.
  • When the sauce mix  is thickening, add veggies mixture. Let it cook for 2 mins.
  • Add chicken pieces. Coat it properly. Cook this till chicken is done.
  • If you want more gravy add more broth or water and adjust spice levels as per your choice.
  • Add black pepper powder.
  • Last, add peanuts and stir once.
  • Turn off the heat and add scallion greens.
  • Serve hot.

Kung Pao Chicken Chinese

  • Always serve hot and immediately after preparing .
  • If you like it with lot of sauce then best way is to add lots of water or chicken broth to it.I had added 2 cups, if you still want more add more but adjust sauces accordingly.
