A new post and perfect for so many occasions...it's Chicken N Cheese Sandwich with Avocado!

So, for some it's the Holiday season and for others its back to school time.
Holidays are when we all want to have potlucks,parties,picnics,long drives,camping and also there are plans of what should be in kids lunch boxes for the new academic year!
Well,this sandwich is perfect solution to all,plus its an easy dinner fix on hectic work days too.


Chicken N Cheese Sandwich Recipe

I made this recipe accidentally,as I was having Avocado and we were pretty happy without eating them.So I had on my mind to utilize them also I was craving for chicken sandwich for some time.
I wanted to have shredded chicken added to sandwich than chunks,but you can go ahead and try chunks of chicken in recipe too.
So I thought of mixing chicken,cheese, some spices and finally add avocado and make an amazing sandwich. Plus weekend cooking is something not so exciting for me but still I have to take out time to cook on weekends.
In my house everyone wishes for different dishes-like my husband wants something different to eat than me or kids,my daughter is having mood for noodles or pizza and I always have another dish in my mind to make!
So when I decide, that I will reduce my weekend stress and relax but I end up doing more work than regular days.
Working days are usually hectic and we all work on clock's tick, but somehow I feel they are better than weekends.Plus there are additional chores to finish.
Apart from all this we have super fussy eaters in my house,so anything I make can't make them happy 😏
The other day my daughter told me to make Butter Chicken with paratha,so I made separate food for us and Butter Chicken for her but finally she did not eat that as she was not feeling like having that!😕 I had no idea and ended up making more food than we could eat! These kids have so much tantrums and fuss about everything!


Baked Chicken Cheese with Avocado Sandwich

I made this chicken sandwich with homemade submarine bread.Actually I gave the bread the shape of a submarine kind but the original recipe was of a regular Bread. Check out my recipe of that.
I made the bread of whole wheat instead of All Purpose Flour,and topped it with few white sesame seeds.
The best part was that I could cut the whole long bread into 4 medium pieces and that each sandwich was so filling that you will not ask for any sides or extras!

Chicken N Cheese with Avocado Sandwich
Delicious Chicken n Cheese sandwich with Avocado for potlucks,lazy weekends,for kids lunch boxes.
Ingredients
  • 1 Long Submarine Bread
  • 1/2 Cup Mayonnaise
  • 1/3rd Cup Coleslaw Dressing
  • 1/3rd Cup Mozzarella,shredded
  • 1 Teaspoon Black Pepper Powder
  • 1 Teaspoon Garlic Powder
  • 1/2 Cup Avocado,sliced into wedges
  • as per need Salt
  • 3 Sprigs Spring Onion,chopped
  • 1/3rd Cup Carrot,grated
  • 1 Cup Chicken,cooked & shredded
  • Additional:
  • Baking Pan
  • Parchment paper/aluminum foil

Instructions

  • Preheat the oven at 325 F or 160 C.
  • In a large mixing bowl,add all the ingredients mentioned except bread and avocado.
  • Mix well everything and check for salt.
  • If you need little more spice then increase the pepper powder.
  • Fill the submarine bread with the chicken and vegetable mix.
  • Line a baking tray with parchment paper or aluminum foil.
  • Place the submarine bread on the tray and bake for 7-8 minutes or till the cheese melts.
  • Take out the bread,once slightly cooled,add the avocado wedges and serve.
  • Enjoy this sandwich for potlucks,lunch,picnics or on lazy weekends!

    9. I love avocado and cheese in my sandwich.. add cold shredded chicken and it's a full meal. Love my sandwiches like this too. Just so filling and satisfying. Isn't it? YUM!
