This Asian inspired Pineapple Chicken is better than takeout, as it's ready in 30 minutes, has sweet, sticky, spicy, and sour sauce, which balances this dish perfectly.

Along with bell peppers and pineapple chunks, fried crispy chicken works wonders.

What is pineapple chicken made of?

For Chicken
  • Chicken - boneless skinless chicken breast meat, cut into bite-sized pieces
  • Bell Peppers - adds vibrant colors to the dish
  • Pineapple - Used either fresh or canned. I have used canned( unsweetened) with juice
  • Sesame Seeds and Spring Onion greens - for garnish
For Sauce
  • Pineapple Juice - Used from the can
  • Brown Sugar - to balance the pineapple tartness
  • Soy Sauce - add the sauce with low sodium
  • Rice vinegar - you can use apple cider also instead
  • Ginger & Garlic - adds flavor to the sauce
  • Black Pepper and Paprika - for the spicy kick to the sauce
  • Cornstarch - to make the sauce thick

How to make pineapple chicken

Step 1:  In a cup, mix all the ingredients for the sauce and set it aside. 

Step 2:  In a mixing bowl, add chicken and all the ingredients for the chicken, rub the chicken pieces well to marinate, and set this aside.

Step 3:   In a skillet, add 1 Tbsp oil, and add the chicken pieces and stir fry them till the chicken is cooked thoroughly. Set this aside.

Step 4:   In the same skillet, add 2 Tbsp oil and fry pineapple, onion, and bell peppers till they are crisp. This should take 3 to 4 minutes
Step 5:   Add chicken to the skillet, and add the sauce.
Step 6:   Let the sauce simmer on medium heat till the sauce is cooked well, coating the chicken and veggies.

Step 7:   Adjust salt and pepper, serve over rice or noodles.

Pro Tips

  • Use fresh or canned pineapple for this recipe, as desired.
  • Cook the sauce till it thickens so that it coats the chicken and vegetables very well.
  • If you prefer this dish dry, then cook until the entire sauce has dried up; otherwise, you can leave some sauce.
  • The use of vegetables is up to you; add any vegetables of your choice.

Substitutions & Variations

  • Use any vegetable of your choice. Onions and bell peppers are used because they are versatile and complement chicken recipes well. However, feel free to use any vegetable of your choice.
  • Instead of chicken breast, you can also use chicken thigh meat.
  • Instead of brown sugar, using honey is also an option, or even white cane sugar.
  • To increase the heat in this sauce, use red pepper flakes or even sriracha.

What to serve with pineapple chicken

I would prefer this chicken served over rice or noodles.
You can try this Shrimp Fried Rice, Chicken Fried Rice, or just have it with plain rice.
