Chow Mein Sauce
The most important ingredient of this easy chow mein recipe is the sauce.
The sauce makes the dish soooo goood! This sauce is mainly made with following ingredients:
- Chili Oil / Sambal Oelek
- Oyster Sauce
- Rice Vinegar/White Vinegar
- Sugar
- Soy Sauce
- Sesame Oil

How to make Chow Mein Noodles
- Firstly in a mixing bowl,add the ingredients mentioned for Chow mein sauce,such as chili oil,rice vinegar,sugar,oyster sauce,light and dark soy sauce.Mix this well and keep aside.
- In another mixing bowl,add the chicken pieces and ingredients for tenderizing chicken.
- This step is used to make the chicken very soft and juicy.
- In a wok/skillet,add oil and when its hot add the chicken pieces and start to stir fry immediately till the chicken is cooked well.
- Once cooked keep this aside.
- Cook the noodles as per package instructions. Hold it under cold water and then let it dry. You can toss these noodles with some oil so that they should not stick with each other.
- In the same wok,add some oil and start stir-frying the noodles till they get crisp and brown.Keep them aside.
- In the same wok/pan,add oil and when its hot add ginger,garlic and spring onion whites sliced.
- Stir fry well, then add carrot sticks,bell peppers sliced,celery sliced and fry well till soft.
- Add cabbage shredded and fry further.
- Add the chicken cooked,add fried crispy noodles and mix once.
- Next add the chow mein sauce and mix well to coat the sauce well on noodles and chicken with veggies.
Chow Mein Ingredients
- Egg Noodles / Yakisoba : Normally chow mein is made with yakisoba or egg noodles available to you. If you cant find either then you can always use whatever brand or variety of noodles you get to use in this recipe. The sauce does the magic.
- Chow Mein Sauce: The chicken chow mein sauce plays the trick to make chow mein noodle the best.
- Veggies of your Choice: I have used scallions/spring onion,bell peppers,carrot,celery and cabbage. You can also use snap peas,broccoli or any other veggies of your choice.
- Chicken: I have used chicken breast meat but you can also use thigh meat too as its more juicier and retains moisture.
- To use chicken in this recipe I have tenderized the chicken with cornstarch/soy sauce/salt and pepper powder.
What are Chow Mein Noodles
Normally chow mein is made with egg noodles/yakisoba or even dry chow mein noodles.
I personally like either dry chowmein noodles or egg noodles but you can always go with whatever best option available with you.
These noodles are mostly available in Asian markets.

Ingredients
- 6 oz/ 200 Grams Egg Noodles/ Chow Mein Noodles/ Yakisoba
- For Chicken Tenderizing:
- 1 Cup Chicken breast Pieces,cut into small thin pieces
- 1 tsp Black Pepper Powder
- 1 tsp Soy Sauce
- As per need Salt
- 1/2 tsp Cornstarch
- 1 tsp Sesame Oil
- For Chow Mein Sauce:
- 1 tsp Sesame Oil
- 1.5 tsp Chili Oil/ Sambal Oelek (Adjust as per heat tolerance)
- 1 Tbsp Rice Vinegar/ White Vinegar
- 1 tsp Sugar
- 1.5 Tbsp Light Soy Sauce
- 1 tsp Dark Soy Sauce
- 1.5 Tbsp Oyster Sauce
- For Stir-Fry:
- 2 Tbsp Oil
- 1 Tbsp Minced Ginger
- 1 Tbsp Minced Garlic
- A generous pinch of sugar
- As per need Salt
- 2 Tbsp Spring Onion Whites and Greens,sliced
- 1/2 Cup Carrot sticks
- 1/2 Cup Cabbage,sliced
- Little extra Chili Oil(optional)
- 1/3 Cup Celery Sliced
- 1/3 cup Yellow and Green Bell Pepper,sliced
Instructions
- Cook the egg noodles/yakisoba or any other noodles of your choice.
Dip the noodles in cold water and let them dry.
Toss them with little oil to avoid sticking together. - In a mixing bowl,add chicken,sesame oil,salt,cornstarch,soy sauce and black pepper powder.
Heat a wok/skillet,add 1 Tbsp Oil and add the chicken pieces and toss immediately,stir fry them till cooked.
Keep them aside. - In the same pan,add the noodles they are dry now and keep tossing them on heat till they are crunchy and browned slightly.
Once the noodles are slightly browned and crispy,keep them aside. - In the same pan,add 1 tbsp oil and add ginger,garlic,sliced spring onion whites,cabbage,celery,carrot,bell peppers and keep stir-frying them on heat till they are slightly browned.
- Add the chicken pieces and fry for some time.
Next add the noodles,mix once.
- Add the chow mein sauce and mix everything well.
Add the spring onion greens.
Mix everything well,keep tossing the noodles on high heat if possible to get the best flavors. - Finally adjust salt and sprinkle some sugar,and optionally add some chili oil if you like little extra spice.
Serve immediately.
