I have been making  Dahi Bhalle / Soft Lentil dumplings for a long time now,but making them perfect,soft, Dahi Vada / Dahi Bhalle was an achievement in itself for me.
However easy and straightforward this dish looks to be,but its equally tricky and needs understanding of process to make it. 
After umpteen tries finally I could make the perfectly,soft,delicious and so good,that now these are a regular in my house.

Dahi Vada / Dahi Bhalle,is a famous street food / chaat recipe /dish in India and almost all chaat houses/restaurants have this on their menu.
This dish is typically served with sweet flavored yogurt,date tamarind chutney,optionally with mint coriander chutney and some sev.

Here's I am sharing how to make these Dahi Vada perfect by even skipping some steps which are normally followed.
First we need to soak the Urad dal / Black Gram  in water for atleast 6 hours. Drain the water completely and in a mixer grinder,add dal with little water,ginger and green chili pepper.  Keep adding little water at regular intervals to help the grinding process. 
The batter is done when the batter is super light,airy/fluffy. To test whether the batter is done perfectly or no,drop some batter in water,if the batter floats on water then its done.
Add salt to this and its ready to be fried. Here you can deep fry the bhalla or use Aebleskiver Pan to avoid deep frying.
Do not add too much water and make the batter watery. The batter should be light,airy and should hold together when frying.
Adding more water to fry these will make the batter watery and will not be able to fry them.
Always fry the bhalla on medium to low flame till crisp.

Next will be to make Dahi / flavored Yogurt, here you can take the quantity of Yogurt as much as you can. There is no limit,its your personal choice.
I have taken 3 and 1/2 Cups of thick Yogurt,unflavored. I used 1 Cup of yogurt to make thin dahi,where I added water to this to make very thin and watery dahi to soak the vada.
Next 2 and 1/2 cups of dahi I used to make thick dahi to be added to the vada finally.

  1. Firstly,soak the dal in sufficient water for a minimum of 6 hrs.
    Drain the water completely.
    Add ginger and green chilly and grind it by adding little water in batches in a mixer grinder.
    Let the batter be very light and fluffy.
    To test whether batter is done,drop a small quantity of batter in a bowl with water,if it floats then its done.

  2. Heat oil in a depp frying pan or you can use Aebleskiver Pan instead for a non-deep fry option.
    Slowly drop a spoonful of batter in oil,and fry it on medium flame till golden in color.
    Drain the vada on kitchen paper and let them cool completely.
    On cooling they will be very soft,check by slightly pressing the vada.
  3. First make the thin dahi,in a bowl take yogurt and whick well,later add all the ingredients mentioned under "Thin Dahi" and mix well.
    Drop all the vada in the thin dahi and keep aside for 1/ 2 Hr.
  4. Next make the thick Dahi.
    For this add yogurt in a bowl and whisk well.
    Add rest of the ingredients to it and mix well.
    Pour this over the vada /bhalla .
    You can refrigerate these dahi vada and serve with mint chutney,date chutney and sev.

Prep Time: 00:20:00 mins.
Cook time: 00:15:00 mins.
Total time: 35 mins + soaking time 6 Hrs.
