Mushroom Manchurian (Gravy)

Famous Indo-Chinese dish, works as a wonderful gravy with kerala parotta/paratha ,naan or butter roti. Make it as a gravy dish or dry version ,still perfect to satisfy the Indo-Chinese  food cravings.



Indo-Chinese is a favorite menu for many of Indian's,and specially when it comes to having Hakka Noodles,Chow mein , stir-fry veggies with chicken,fried rice,any kind of Manchurian and specially szechwan...I am already drooling😊. 
So this recipe was my latest try with veggies,as mostly I make chicken chilly,chicken 65, as these are our favorites and they also belong to the Indo-Chinese restaurant menu's. I have already shared recipe of chicken 65!Do check that.

Mostly when it is vegetarian day for us ,then usually these kind of quick easy and flavorful recipes always come to my rescue. This is a very straightforward and simple recipe,and fixes dinner/lunch in under 30mins.
Mushroom and cauliflower(Gobi) are famous Indian Vegetarian choices for Machurian or chilli. Nowadays even babycorn is in demand.
I have shared recipe with very little gravy but as per individual preferencs,add more or less water and adjust the consistency accordingly.

Mushroom Manchurian
Famous Indo-Chinese gravy Mushroom Manchurian,enjoy this with prrotta/paratha,naan or roti!
Ingredients
  • 8 Button Mushroom,haved
  • For Batter
  • 3 Tablespoon Maida/APF
  • 2.5 Tablespoon Cornstarch
  • as per need Salt
  • 1/4 Cup approx. Water
  • For the gravy
  • 2 Tablespoon Vegetable/Canola Oil
  • 8 Cloves Garlic,chopped
  • 1/2 Inch Ginger,chopped
  • 2 Green Chilli
  • 1/4 Cup Onion,sliced
  • 2 Sprigs Spring Onion,whits and green separated
  • 1/2 Cup Red Bell Pepper
  • as per need Salt
  • 1/2 Teaspoon Sugar
  • 1/2 Teaspoon Vinegar White
  • 1 Tablespoon Red Chili Sauce
  • 1.5 Tablespoon Soy Sauce
  • 1/2 Cup Water
  • 1.5 Tablespoon Cornstarch
  • Oil to fry
Instructions
Wash and cut the mushrooms in halves.
In a mixing bowl add all the ingredients mentioned for batter except water.
Add water slowly,checking there are no lumps and the batter is not runny nor thick.

In a deep frying pan,add oil and when its hot,dip the mushrooms in batter and fry on medium flame till crisp.
Drain them on kitchen tissue.

In a pan,add oil and when its hot,add garlic,green chillis,ginger,onion,spring onion whites,red bell pepper.
Add the fried mushrooms.

Once sauteed,add salt and sugar.
To this add vinegar,chili sauce and soy sauce.

Mix well,add water and cornstarch mixed with little water to form slurry.
Toss well and add spring onion greens.

Serve hot with roti/paratha.

Here are few Tips:
  • Always make sure that the mushrooms are dry when dipping in batter to fry.This will prevent any accidental oil spluttering.
  • Make the batter enough to coat mushrooms,not thick nor runny.
  • As per choice of final dish decide the amount of water to cornstarch,if you want gravy then add more water and lesser cornstarch.If you prefer dry version then add very less water and reduce cornstarch too.
