Dhaba Style Baingan Bharta

A new post for all bharta lovers...Dhaba style smoky Baingan Bharta!

This dish was invented in my kitchen as I wanted to try some new version of the typical konkan bharta recipe.
I had a taste of dhaba style smoky bharta on my way to Goa from Bangalore,when I was commuting by bus(btw this was way long back) :) :)
Our bus took a leisure stop at one of the dhaba's on the highway. I had ordered a vegetarian thali(which normally comprises of lot of dishes,in tiny portions).
I could not forget that taste till now,although I was very skeptical ordering food as it was my first experience eating on a roadside dhaba that time as I was worried about getting a upset stomach(I literally used to eat cookies,chips and fruits on my journey every-time) :)

My recipe is a very similar taste to that of the dhaba bharta...you all try this and enjoy!

Dhaba Style Baingan Ka Bharta
Ingredients
  • 1 Medium Brinjal
  • oil as per need
  • 1 Teaspoon Mustard Seeds
  • 2 Small Green chillies
  • 1 Medium Onion,finely chopped
  • 1 Medium Tomato,finely chopped
  • 6 Garlic,cloves,finely chopped
  • Salt as per need
  • 1 Teaspoon Sugar
  • 1 Teaspoon Turmeric Powder
  • 1/2 Teaspoon Garam Masala Powder
  • 1/2 Teaspoon Pav Bhaji Masala Powder
  • 1/2 Teaspoon Red Chilli Powder
  • 3 Tablespoons Grated coconut
  • 2 Sprigs Cilantro,finely chopped
Instructions
Firstly,apply oil to baingan / brinjal.
Roast the brinjal on direct flame with the help of tongs or roast it on tawa/flat griddle.
Till the outer skin of brinjal is charred and inside pulp is cooked and soft.
Let it cool.
Peel off the skin of brinjal and discard it.
On a plate mash the pulp with the help of knife or with hands.
Prick the green chillies with fork and roast on flame too.
Do this till the chilli outer skin gets slightly charred and you can smell the burnt chilli aroma.
In a wide pan,add oil.
When its hot ,add mustard seeds.
When they splutter,add green chillies crushed,garlic chopped.
Fry it for a while.
Add onion,tomato to it.
Fry further till the onion turns pink.
Add salt,sugar,turmeric powder,red chilli powder,garam masala powder,pav bhaji masala.
MIx well.
After a couple of minutes add grated coconut.
Mix well.
Finally add brinjal and mix well till everything is well incorporated.
Garnish with cilantro.
Serve with hot phulkas or rice!

Tips:
  • To give extra flavor to the bharta, try peeling the garlic cloves and roast them on direct flame too and add them chopped to bharta.
  • Add more spices if you like very spicy version.
