Crispy Burnt Garlic Veggie Noodles

A new lip-smacking post for veggie lovers...Crispy Burnt Garlic Veggie Noodles!!

I came up with these noodles on the go,as I rushed to kitchen...well,somehow I feel best dishes in my kitchen end up unplanned!
I had lots of vegetables in the refrigerator and as my family is Carnivore,I have to make some wonderful dishes to please them on veggie days! Huh...well that is hell of a task!!

These turned out to be one of  the best crispy noodles I had,earlier I had posted recipe of Crispy Pan Fried Chicken Noodles, but I didn't deep-fry the noodles there,instead I pan fried the noodles till crispy n crunchy and that too gives a nice unique aroma to the noodles.
In this recipe the Garlic flavor is most important,as the noodles should be having garlic fragrance.

Crispy Burnt Garlic Noodles Veggie Crispy Noodles


Crispy Burnt Garlic Veggie Noodles
  • 1 Packet Hakka Noodles
  • 14 Garlic cloves,chopped
  • 1 Tablespoon Ginger,finely chopped
  • 2 Green Chilies,slit
  • 1/2 Cup Cabbage,shredded
  • 6 Sprigs Scallion,green and White,chopped
  • 1/4th Cup Yelow Bell Pepper Shredded
  • 1/4th Cup Carrot,shredded
  • 8 Mushrooms,sliced
  • as per taste Salt
  • 1 Teaspoon Sugar
  • 1 Teaspoon White Vinegar
  • 1 Teaspoon Red Chilli Sauce
  • 2 Tablespoons Tomato Ketchup
  • 1 Tablespoon Soy Sauce
  • Oil as per need
  • 2 Tablepsoons Cornstarch
First, cook the noodles as per packet instructions.Apply oil to noodles along with cornstarch,coat well and keep aside.
Now in a thick bottom pan,add oil. When the oil is hot, add the noodles in batches and fry them till crisp.
Drain the noodles on absorbent paper.
In a pan,add oil,keep the gas on high heat and add garlic,ginger and green chilies.
Toss them so that they don't get burned.
When the garlic is oozing aroma,add all veggies,salt and sugar.
Toss on high heat,till veggies are nicely cooked.
This mixture will start leaving aroma that would fill your house with restaurant style food aroma.
Add all sauces,vinegar and toss the mixture.
Now to serve,in a bowl or plate place the noodles,add the veggie mixture enough for each serving.
Toss the nodles and veggie mixture well,crush the noodles slightly with a spoon so that the veggie mixture coats the noodles well and serve immediately.
Enjoy hot noodles!!

  • Serve the noodles immediately after mixing.If you mix and let it sit then they will get soggy.
  • Adjust the sauces as per choice.
  • Noodles will give a classic restaurant style taste and aroma only if you toss the vegetables on high flame till they are crunchy and cooked well.
  • The veggie mixture does not have any gravy,so if you want little gravy then add 1 & 1/2 Tablespoon cornstarch mixed with 1/2 Cup water to the mixture to get gravy.
  • Alternative to this recipe is, if you want to make regular noodles instead of crispy, do not fry the garlic and green chilies initially,but instead cook the veggie mixture,add the noodles,toss them and in a separate pan fry the green chilies and garlic and finally add it to the noodles.
