A sweet post for the festive season of Navratri...Carrot-Sabudana(Sago) Kheer!!

I tried this kheer recently and turned out lovely. It takes just 25 minutes to make it...so easy and tastes heavenly.
It takes few ingredients, nothing fancy and easily done in no time. It takes Carrot and Sago(Sabudana) as main ingredients for the kheer. Works out fine when you are fasting too.
One serving is super filling and can keep you going for 4-5 hrs without problem.

I thought of making some new sweet, and this kheer was delicious. You will never be disappointed with it.

Carrot-Sabudana(Sago) Kheer
Ingredients
  • 1/2 Cup Carrot,grated
  • 2 Tablespoons Sabudana/Sago,washed and soaked in water 10 mins before cooking
  • 1 Cube Palm / Panai Jaggery
  • 1 Teaspoon Cardamom Powder
  • 1 & 1/2 Tablespoons Ghee / Clarified Butter
  • 2 & 1/2 Cups Whole Milk
  • 1/2 Cup Khova / Mawa, crumbled
  • 8 Teaspoons Sugar
  • Cashewnuts(10),Black Seedless Raisins(10),Pistachios(10) Dry Fruits,sliced
Instructions
Before you start cooking, wash the sabudana and keep them soaked in water for 10 mins.
In a pan, add 1 Tablespoon ghee, and roast grated carrot.
When the raw smell of carrot is gone then switch off gas and keep the carrot aside.
In the same pan,add 1/2 Tablespoon ghee and roast dry fruits. Keep them aside.
Now in the same pan,add milk and sabudana. Let it cook.
Keep stirring in between so that milk does not get stuck to bottom of pan.
Add sugar and jaggery.
Now the milk will thicken and reduce a bit, add khova. Mix well.
Cook it for some more time.
Add grated carrot. Cook till carrot and entire mixture has cooked and thickened well.
Add cardamom powder and dry fruits.
Switch off the gas.
Serve hot or cold...Enjoy!!

Tips:

  • You can skip sugar all together and adjust jaggery quantity.
  • If you don't find Panai jaggery,you can use regular jaggery or instead use sugar.
