Lemon Cake



Another cake recipe for the Christmas season....Lemon Cake!!

This cake is a big hit at home...and just vanished in no time. I had ordered a lemon juice bottle to have club soda with lime juice but somehow I forgot to consume it.
When I was cleaning my refrigerator this week,I found this bottle of lemon juice and thought of making something with it...so made my long time to-do list cake....a soft,spongy and completely awesome Lemon Cake!
You can use fresh lime juice too.

The taste was simply awesome..to give it a look of lemon I used green tutti frutti. You can skip that too.

Lemon Cake
Ingredients
  • 1 & 1/2 Cup Maida / All Purpose Flour
  • 3/4th Cup Sugar
  • 2 Tablespoons Cornflour
  • 3/4th Cup Lemon / Lime Juice
  • 1/2 Teaspoon Salt
  • 1/2 Cup Unsalted Butter,at room temperature
  • 1/4th Cup Milk
  • 3 Large Eggs, at room temperature
  • 1 Teaspoon Baking Powder
  • 1/4th Teaspoon Baking Soda
  • 1/4th Cup Green Tutti Frutti
Instructions
Preheat oven at 350F / 180C. Line a baking tray.
In a bowl,sieve twice,flour,salt,cornflour,baking soda,baking powder.
In another bowl,whisk eggs for 1 minute.
Add to it sugar. Mix till the sugar is dissolved.
Now to this add butter,lime juice and milk. Mix well.
The mixture will curdle.
Now add this in parts to the flour mixture and mix well till everything is incorporated nicely.
Beat well for 1 minute till the mixture is fluffy.
Pour his batter in the baking pan,sprinkle the green tutti frutti.
Mix once.
Bake for 1 hour or till the cake is done. A toothpick or knife comes out clean.
Let it cool completely before taking out of pan.

Tips;
  • You can add more flavor by adding lemon zest too.
