Chickpea Tikka Masala


Vegan Chickpea Tikka Masala Ingredients: 



  • Chickpea:  Use cooked,drained chickpeas(if you are using from can then drain and wash well before using) or soak the chickpeas overnight and then further pressure cook them till soft.

  •  Chickpea Roasting Masala Mix:  Just mix together some salt,turmeric powder,lemon juice,red chili powder optionally for extra spice smoked paprika.


  •  Tikka Masala Sauce:    Spices used in making the tikka curry is coriander powder,cumin powder,garam masala powder,chili powder, apart from this whole spices are used which are - cinnamon,poppy seeds,sesame seeds, fennel, cumin, cloves,peppercorns,cardamom.



Why Roasted Chickpeas?


The recipe is tikka masala in which "tikka" means meat or a portion of vegetable marinated in spices then further roasted in tandoor or gas till smoky/charred flavor is achieved.



Same way when using chickpeas won't be possible to roast them in tandoor or on fire, so optionally we can roast the marinated chickpeas on a griddle/skillet or in oven too.

What is the difference between chana masala and tikka masala?


In chana masala,chickpeas are soaked overnight,drained and washed,further along with spices and tomato-onion based gravy cooked in a pressure cooker/crockpot till the chana are soft and desired gravy consistency is reached.



In tikka masala the chana are first roasted after marinated in spices and then added to the tomato-onion based gravy and cooked.


How to make tikka masala sauce?


To make tikka masala sauce / gravy ,first in  a pan add the ingredients for masala gravy(i.e. onion, tomatoes, cashews, garlic,ginger and whole spices mentioned) and saute them with a little oil, till soft.



Once cool,grind with all spice powders and little water to a smooth paste.(as per required consistency add more or less water to make paste). Also you can add coconut milk to make the masala gravy.


How to roast the chickpeas for making the authentic chickpea tikka masala?



For any tikka masala recipes,normally the vegetable/cottage cheese/poultry is cubed then marinated with spice blends further skewered to grill in tandoor/oven/gas/outdoor grill.



Since chickpea are tiny so doing this will be time consuming job,so roasting the chickpeas is easier when marinated with spices and roast them directly on gas by spreading them on skillet,stir in a while using spatula.



Next option is to arrange them on a baking pan and broil them for 5 mins or little more till they appear slightly charred.

How to make chickpea tikka masala?


Step1:   In a Mixing Bowl,add the chickpeas and spices for marination. Toss well to evenly coat the chickpeas with spices.


Step2:   On a skillet apply oil and spread the marinated chickpeas. On medium heat roast the chickpeas and occasionally stir them with a spatula till they look slightly charred.

Step3:   In a pan add the ingredients for tikka masala sauce,i.e.onion,tomato,cashews,whole spices,ginger,garlic) and little oil,roast them till soft.


Cool it then grind/blend (Hand Blender) to a smooth paste by adding little water and all spice powders.

Step4:   Add the ground paste to the pan again and let it come to a one boil.


Depending on the desired consistency of the masala you can add water quantity. 


Optionally you can also add coconut milk to thicken sauce but this sauce works very well,so no need of adding any cream or coconut milk.


Step5:   Add the roasted chickpeas and mix well. Cook for a few seconds,adjust salt and add chopped cilantro.


Serve with naan or rice.

  • You can adjust the quantity of water as per the consistency of sauce you like.
  • If you want extra creamy sauce then add coconut milk instead of adding cream.
  • Do Not overcook the chickpeas if you are not using canned chickpeas. Try to cook them just right so that they are cooked well and hold the shape too.Overcooking will make them mushy.
  • Always adjust spice levels in this recipe to suit your spice preference.Adjust quantity of red chili powder to adjust as per your liking.
  • Instead of vegetable oil you can always opt for cold pressed coconut oil.It gives amazing flavor to the dish too.

  • 1.5 Cup Chickpea,cooked,drained,washed
