Amazing side dish to try next - bet you wont stop at one! - Delicious Shrimp Stuffed and Grilled/Roasted Peppers are so flavorful and topped with Cheese to add extra flavors in this recipe.You got to try this!



This is my new favorite and bet it will be your's too- Grilled/Roasted Shrimp Stuffed Peppers! Perfect side for some sticky rice/fried rice/noodles or even you can have it as an appetizer.
This recipe wont disappoint you for sure as this got over in no time at my home!

Very easy to put together and very flavorful recipe to try and this will work best for potlucks or any parties too.
I could not believe that this was asked for second helping at my place from people who are totally Carnivores LOL :)

What other stuffings I can Put in these Peppers?

I have used Shrimp here as I wanted to feed my family vegetable along with seafood as we prefer seafood over anything else in this world, but you can use Cottage Cheese/Paneer, Rice with beans /lentils ,Spicy Corn stuffing or anything else that you like. Next  I would be trying Chicken too.

Stuffed Peppers Recipe
Very flavorful Shrimp Stuffed Peppers are best as sides for potlucks,family dinner's and parties too.

Ingredients

  • 4,Small Peppers(I used two Yellow,1 Green and 1 Red)
  • For marination:
  • A pinch Salt,for each half of Pepper
  • A pinch Sugar,for each half of Pepper
  • For Stuffing:
  • 12,Medium Shrimp,washes,deveined
  • For marination:
  • Salt as per need
  • 1/2 tsp,Turmeric Powder,ground
  • 1/2 tsp,Red Chili Powder
  • For making the stuffing:
  • 2 tbsp,Oil
  • 1 Large Red Onion,Chopped
  • 2 Medium,Tomato,Chopped
  • 1/2 tsp,Sugar
  • 1/4 tsp,Turmeric,ground
  • 1/2 tsp,Ground Cumin
  • 1/2 tsp,Coriander, Ground
  • 1/2 tsp,Soy Sauce
  • 1 tsp,Tomato Ketchup
  • 1 tsp,White Vinegar
  • 8 , Black Peppercorns,freshly cracked
  • 2 tbsp,Cream
  • Additional:
  • 8 tbsp,Mozzarella,grated
  • 2 Sprigs,Cilantro,chopped

Instructions

  1. Wash the peppers,dry them.
    Cut each pepper,from top to bottom,remove seeds and membranes.
    Apply salt and sugar to each half.
    On a Grill Pan or directly on flame roast/grill the halves with the help of Locking Tongs till skin is slightly charred yet they are crisp.
  2. Wash the cleaned and deveined shrimp.
    Cut each shrimp into small pieces.
    Marinate the shrimp pieces with ingredients mentioned under marination.
  3. In a pan,add oil and when its hot,add the onion and tomato followed by all ingredients except cream and cook on low flame till soft.
    Add shrimp to this and cook further,finally add the cream,mix and cook further till no moisture left.
  4. Add this stuffing generously to each pepper cavity and top with shredded cheese,finally with cilantro.
  5. Preheat the oven at 180C/ 360F and bake for 10 mins or till the cheese is melted.
    Served immediately.
Yield: 8 Servings
Prep Time: 00:20:00 mins.
Cook time: 00:20:00 mins.
Total time: 40 mins.
