A new post again and this time it's my new favorite dessert.. Tender Coconut Pudding!

Recently,I stumbled on few recipes of this pudding,so thought of giving it a try.
I did this the way my family would love. We love puddings but they should not have an overpowering sugary taste to it. So I made this pudding very mild in sweetness,as I wanted to highlight the taste of tender coconut in this more than sugary punch on your taste buds.
But you can go ahead and add more additions of condensed milk or sugar and enjoy!

This is my second attempt to make this pudding. Actually the first attempt was quite hilarious. I was at my mom's place that time and my sister was there too.So I thought of giving this pudding a try.
The pudding was so stubborn that didn't agree to set and finally we had to finish it like an ice cream!
I had used China Grass powdered at that time. So this time I used Agar Agar strips. I guess it should work perfectly with china grass too but may be my quantity calculations did not work out then!

Tender Coconut Pudding
Ingredients
  • Tender / Young Coconut  (Separate the water and meat) 
  • 8 Grams Pack Agar Agar (Strips)
  • 400 Grams Tin Condensed Milk
  • 1 & 1/2 Cup Whole / Full Fat Milk
  • For Garnish: Tender coconut meat, sliced
Instructions
Separate the Tender Coconut water and meat.
It yield me roughly 3/4th Cup water and little more than 1/2 Cup meat.
In a mixer grinder/blender,add 1/2 Cup roughly chopped tender coconut meat and 1/4th Cup Tender Coconut water.
Grind this to a smooth paste.
In a mixing bowl,add the remaining 1/2 cup Tender coconut water and agar agar strips.
Let them soak for some time.
The agar agar strips will soak all water.
Now to this mixing bowl add the condensed milk,whole milk and ground paste.
Mix well.
Now transfer this to a stainless steel or nonstick pan.
On medium heat keep stirring this till the agar agar strips melt completely.
Make sure you do not let the mixture stick to bottom of the pan or burn it.
When dissolved,switch off the gas.
Take the pan off the heat and pour this in ramekins or serving bowls.
Garnish with tender coconut meat sliced.
Refrigerate for few hours before you serve!

Tips:
  • Increase/Adjust the quantity of ingredients as per the coconut meat and water you get.
  • If you like,then add more sugar/jaggery or condensed milk.
  • Refrigerate it for a while to serve chilled.
