Badam Elaichi Kulfi (Almond Cardamom Kulfi)



A new post for the summer and mostly ice cream lovers....Badam Elaichi Kulfi!

Summer is making all of us sweat like pigs...well we all know pigs do not sweat much! But still to say idiomatically! :) :) :)
I am finding new ways to keep cool...one of the ice-creams which I made this summer was Mango Icecream(no whip,No Churn),do try that too!
This one is another find,easy to make kulfi and delicious!

Trust me this summer nothing can cool us better than ice creams,aam panha's and chilled fresh fruits!
Best part of this kulfi? yes...you do not have to stand infront Gas for hours stirring the milk to thicken...yes! just a work of 10 minutes and you are sorted!

Badam Cardamom Kulfi
Ingredients
  • 2 Cups Milk,Whole / Full Fat
  • 1/4th Cup Almonds,finely chopped
  • 2 Tablespoons  Vanilla Custard Powder
  • 1 Tin(200 gm) Amul Mithai Mate (Or Sweetened Condensed Milk)
  • 3/4th Cup Milk Cream (Whipping or Regular)
  • 1 Cup Almond Mix (I used MTR)
  • 1 Tablespoon Elaichi Powder (Cardamom Powder)
  • Additional:
  • 8 Kulfi Moulds
  • 8 Kulfi Sticks
Instructions
In a shallow pan,add milk and heat it on medium flame.
Make sure it does not burn.
When its hot,add custard powder to it.
Make sure there is no malai/cream formed in milk.
Keep stirring continuously,making sure there are no lumps formed.
Keep stirring till the milk is thickened.
When its getting thick add chopped almonds.
The right consistency is the one we get to make fruit custard.
Slightly thick consistency is right one.
Take it off the gas and let it cool.
To this add the mithai mate or any sweetened condensed milk.
Mix well.
Add almond mix and mix well.
Finally add elaichi powder and cream.
Now,pour this mixture in kulfi moulds.
Cover and freeze them for 2 hours.
This time the kulfi is slightly set.
Place kulfi stick in each of the kulfi mould.
See that the kulfi stick stands firm after you place them or else you need to wait for some more time so that kulfi is hardened.
Let it refrigerate for 6-8 hours.
To remove the kulfi from moulds rub the kulfi mould between your palms or dip them in a bowl of water to loosen the kulfi.
Enjoy chilled!

    1. yes I have used...the second last picture has it added but i mixed it and then clicked picture :) so may be its not that clear. BUt just follow the recipe it will turn out yummy.
