Another interesting post...this time it is Pan Fried Noodles!!

Crispy Pan Fried Noodles -Tried these at many occasions in restaurants and loved the crunchiness in every bite.
Tried to recreate the same magic at home and did it successfully!

I am a big fan of noodles,love them in any form possible but crispy noodles is something which I can live to eat...the aroma of fried noodles,veggies ,fried chicken, scrambled egg has filled in my house and loved the awesomeness.

Pan frying the noodles is time consuming as this is a bit time consuming. You can deep fry the noodles the noodles if you want instant option too.
Here the heat level required to cook the noodles to release the lovely aroma along with right level of crispiness is achieved only after a certain time of frying the noodles.
Do not fry or toss the noodles at very high heat not at low or medium,somehow what I was trying to get here is crispy noodles and with flavor coming from the heat /spices/sauces .

I tried broiling them initially in oven just to see if I get the same taste and crispiness so that time required to pan fry is reduced but didn't get what I wanted. You can still give a try and see if it works for you.

Crispy Pan Fried Noodles
Ingredients
  • 1 Packet Hakka Noodles
  • 1 No Chicken, Breasts
  • 3 No,Large Eggs
  • 5 Sprigs,Spring Onions, whites and greens chopped saparately
  • 1/4 Cup Green Bell Pepper, sliced
  • 1/4 Cup Cabbage, shredded / diced
  • 1/4 Cup,Carrot,julienne
  • 5 Garlic cloves, grated
  • 1" ,Ginger,grated
  • 2 No,Green Chili,slit
  • 1/2 Tablespoon Black Pepper Powder
  • 3 Tablespoons Soy Sauce
  • 1 Tablespoon White Vinegar
  • 1 Teaspoon Sugar
  • 1 Teaspoon Red Chili Sauce
  • as per need Salt
  • as per need Oil
Instructions
First, cook the noodles as per packet instructions. 
I normally, cook the noodles for sometime and then drain water and drain one more time with cold water. Keep aside.
Wash and clean,chicken breast.
Boil water in a pot and add the chicken pieces to it.
When its cooked,drain the water and finely chop or shred it and keep aside.
Add little salt and pepper powder to it.
In a pan,add little oil and when its hot break the eggs.
Saute them on medium to high flame.
Add little salt to it.
Once done,keep aside.
In the same pan,add more oil,and in batches add noodles and fry them on Medium to High heat.
Keep on stirring them continuously so that they wont stick to pan.
Don't let the noodles form nest or stick to one another.
Keep on separating them.
Keep it aside.
In the same pan,add little oil and add first add ginger,garlic and green chili.
Then add all vegetables except spring onion greens.
Add salt and keep on stirring / tossing them.
You will know the veggies are done when they will start leaving a nice aroma.
Add Soy Sauce,sugar,vinegar,pepper powder,red chili sauce.
Stir well, finally add chicken,egg and noodles.
Add the spring onion greens.
Mix well and serve hot!!

Tips:
  • Frying noodles on high heat, also chicken and veggies gives a nice aroma and taste to the dish.
  • I didn't deep fry the noodles ,as wanted to avoid deep frying.
