Modak Recipe (Ukadiche Modak) Steamed Rice Dumpling

Most awaited festival of the year for Indians and the festive traditional sweet that it brings is steamed  Modak / Ukadiche Modak(steamed Rice dumplings stuffed with sweet jaggery filling)


Ukadiche Modak/ Steamed Modak!!

This is a traditional Chaturthi celebration sweet /prasad.I have finally managed to make it this year.

These are super moist,soft,spongy and pure white dumplings which are specially made for Ganesh Celebrations. One more variation of these I make is the deep fried one.But the stuffing that I use in deep fried one's are different than steamed one's. But whether they are fried or steamed the final outcome is super-duper good and pleases the God!!

I tried these for the first time and could make them as soft and delectable as possible. The outer cover of my modaks may not be perfect as done by our granny's or mums but the attempt counts and the taste :)

So,please try these modak's this Ganesh Festival and take blessing from Ganesha!!




A steamer with some cotton soft modak(ukadiche modak)


Here are the step by step instructions of how to make these Modak:
  • Firstly,you need to make the stuffing. For stuffing,In a pan,take some Mung Dal(Split Mung Beans Dal),few sesame seeds,some poppyseeds(optional),freshly grated coconut,ghee,cardamom ground,cashewnuts and jaggery grated.
  • Cook this on lowest flame to avoid burning or getting dry.
  • This will be mixed well and soft ,delicious stuffing will be ready in about 5 mins.
  • Next make the cover for the dumplings/Modak.
  • In a sauce pan,add water,ghee,oil and salt and let the water come to a boil.
  • Once it starts to boil,add both the flours to this water and immadiately reduce the flame/heat to sim.
  • Mix well with laddle ,switch off the heat and cover with a lid and keep aside.
  • Let it sit for few mins and the empty the contents on the plate and start kneading the dough.While doing this apply little water your hands and knead the dough well.
  • Make sure the dough is very soft and smooth.
  • You can keep this cover with a damp cloth to make the modak later too.
  • To make the modak cover, pinch a dough ball,flatten it on your palm and start making small circle on your hands.
  • Next,pinch edge of the circle to make the folds for the modak.
  • Add a spoonful of the stuffing and slowly fold the modak.
  • Meanwhile,keep a steamer with water to heat.
  • Apply ghee to the perforated steamer plate and when water is hot,dip the base of each modak in little water and keep on the perforated plate.
  • Steam these modak for 10 mins on medium flame.
  • Let them cool slightly before serving.
  • To serve pour a spoonful of ghee on each modak.

Ukadiche Modak / Steamed Modak
Soft, sweet Modak for Ganesh Celebrations,stuffed with coconut and jaggery filling!!
Ingredients
Instructions
In a pan, add  ghee. When the ghee is hot, add grated coconut,jaggery,moong dal,cashew nuts ,poppy seeds and sesame seeds.
Cook on low flame, till the entire mixture is nicely mixed together to form a soft , sweet mixture.

Finally add cardamom powder.
Mix well and keep aside.
Now in a sauce pan, add 1 cup water, ghee,oil  and salt and let it boil.
When the water starts to boil, add the flour. 

Reduce the heat and mix the flour mixture for a few seconds.
Then switch off the heat,cover the pan with lid and keep it aside to cool down.
When it has cooled down then make the dough.
Empty the contents of the rice flour mixture on to a plate.
Knead the dough with hands such that the dough is smooth.
Apply water to your hands to knead the dough.
Now take a lemon sized ball of dough on your palm. 

Press the dough ball on your palm, then with hands slowly try to make a small puri / circle on your palm.
First pinch around the edge of the circle to make the folds in modak.
Add 1 Tablespoon of the stuffing mixture on the puri and fold the edges of the puri carefully to make it a modak.
While you are making modaks, keep the steamer with water filled without lid on gas.

Let the water boil.
Once you are done making modaks, apply ghee to the plate in which you will steam the modaks.
Dip the bottom of each modak in little water and keep on the plate.
Arrange all the modaks carefully.
Now keep the plate or the container in which you will steam modaks in the steamer.
Close the lid and on medium heat, cook it for 10 mins.
Switch off the gas and let it cool.
After a while open the lid and touch the modaks to see if they are done.
The right test to see if they are done or not is that they should not stick to your fingers and nor to the bottom of the plate or container.

Tips:

  • When making dough, you can add another tablespoon of ghee to the dough, to make it smooth.
  • Also, apply little water to hand when kneading the dough.
  • When making puri of the dough ball,do not make it too thick or too thin.
  • Dip the bottom of modak in water before placing them on the greased plate as this helps to avoid sticking the modak on to plate.
