 Learn how to make some pillowy soft Potato Gnocchi and very close to Olive Garden creamy Chicken Gnocchi Soup ,loaded with carrots,Spinach and Potato Gnocchi!


So it's still the Soup Season, after the Christmas and New Year food and coming out of the delicious food hangover,finally back to some comforting,creamy soup to fight the cold!


Here's what I did this time,I have been a fan of the Olive Garden Menu among many others,and wanted to try their famous Chicken Gnocchi Soup and have been on my list for a while,so here it is ,super easy and super simple creamy delicious Chicken Gnocchi Soup!


You can get store bought Potato Gnocchi but it's so easy to make so you can opt for making at home if you have some time on your hands.


I have shared recipe to make Potato Gnocchi,check that and make your own gnocchi.


It can be also frozen for a couple of days. Instead of making gnocchi and freezing it,roll the dough onto a thick big log,cover tightly with a fresh wrap and freeze it, and when you need to make gnocchi then thaw the dough in the refrigerator section for few minutes and then use to make gnocchi to be used in the recipe of your choice.

Here are the steps to make easy homemade Potato Gnocchi:


  • Firstly,boil the potatoes and peel them once they have cooled.

  • Strain any water left and mash the potatoes with a potato masher.

  • Add flour and salt to it and with light hands make a soft dough.

  • Spread some flour on your working surface and roll this dough into a long roll / rope kind of shape,which is 1/4 Inch thick.









  • Cut the roll / rope into 1/2 Inch pieces, and with the help of back of a fork or with a special Gnocchi Board roll the each piece and keep aside.










  • If you have sufficient gnocchi done then leftover dough,wrap in a food wrap and freeze it to use later.

    • Next use the gnocchi in this soup recipe or any recipe of your choice.

    Here are the steps to make creamy Chicken Gnocchi Soup:
    • Firstly, saute the veggies in butter till soft.

    • Next add the broth,spices and shredded chicken and cook further.

    • Next add the flour,cream and milk mix and cook on low flame.

    • Finally add the spinach and gnocchi and cook for 5 minutes or more depending on how soon the gnocchi cooks. Typically gnocchi cooks pretty fast and floats on top.

    • Serve immediately.

    Creamy Chicken Gnocchi Soup
    Very easy ,creamy,delicious homemade Gnocchi and Chicken Soup!

    Ingredients

    • To Make Homemade Potato Gnocchi:
    • 1 Cup + 1 Tbsp,Potato,mashed
    • 1/2 Cup + 1 Tbsp, All Purpose Flour/ Maida
    • 1/4 tsp,Salt
    • For Chicken Gnocchi Soup:
    • 1/2 lb, Chicken Breast/ Thigh meat,shredded
    • 3 Tbsp,Butter,unsalted
    • 1,small,Red Onion,chopped
    • 4 Garlic,cloves,chopped
    • 1/2 Cup,Carrot,sliced
    • 2 Cup,Chicken Broth/Stock
    • 1 Cup,Milk,room temperature
    • 1/3 Cup,Cream,room temperature
    • 2 Tbsp,All Purpose Flour/Maida
    • 1/2 tsp,Thyme ,dried
    • 1/2 tsp,Black Pepper Ground Powder
    • 1 Chicken Bouillon
    • 1/2 tsp,Oregano,dried
    • 1/2 tsp,Parsley ,dried
    • 1 Cup, Potato Gnocchi
    • 1/2 Cup,Fresh Spinach
    • As per taste,Salt

    Instructions

    1. To make Homemade Potato Gnocchi:
      Boil 2 Medium or 3 Small Potatoes till soft.
      Cool off and then peel them.
      Mash the potatoes completely with a Potato Masher.
      Add flour and salt to it.
      Make sure there are no traces of water.
      With light hands knead the dough to form a smooth ball.
      If the dough is sticky add little more flour to make it dry and smooth.
      Divide the dough into equal three parts and on a floured kitchen surface,roll the dough into a long log (or rope kind), around 1/4 inch thick approximately.
      Cut 1/2 inch pieces of this long rope.
      With the help of Gnocchi Board or back of fork roll the gnocchi.
      Measure approximately 1 Cup of this gnocchi and leftover wrap in a Plastic Wrap and freeze to use later.
    2. To make the soup: In a pan add the chicken breast/ thigh with sufficient water to submerge and cook till chicken is cooked well.
      Fish out the chicken and shred it.
      Strain the chicken stock and reserve to use later.
      In a pan,add butter and veggies and saute till soft.
      Add the broth,spices and cook further.
      In a mixing bowl,add the flour,cream and milk and mix well.
      Make sure there are no lumps and slowly add this to the soup,cook on low flame.
      Add the shredded chicken ,gnocchi and spinach.
      Cook further till the gnocchi is done and floats on top.
      Serve hot!
    Yield: 4 Servings
    Prep Time: 00:30:00 mins.
    Cook time: 00:15:00 mins.
    Total time: 45 mins.
