Besan Ki Kachori

Delicious,crisp and flaky Kachori are best for satisfying the street food cravings ! This recipe is perfect and will give you perfect crisp Besan Kachori,serve them with sweet Date chutney and hot chai.

Eating out or in a take-away joint,street food stall is not healthy nor economical ,but if we know how to make that perfect recipe at home then we would never bother ourselves to spend time and money looking for the right taste outside but rather make it ourselves at home and in a hygienic place and enjoy as much as we want.
Here's my another attempt to share crispy Besan Kachori with date chutney! 

These Besan Kachori turned out so crisp and wonderful that they did not go soggy for two days straight even after I kept them out without storing in an airtight container.

Besan Ki Kachori
Perfect recipe of crisp,flaky Besan Kachori served with sweet date chutney!
Ingredients
  • For the pastry / dough
  • 1 & 1/4 Cup APF / Maida
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Sugar
  • 4 Tablespoon Hot Oil
  • as per need Warm Water
  • For Stuffing:
  • 4 Tablespoon Gram Flour / Besan
  • 1/2 Teaspoon Salt
  • 1 & 1/2 Teaspoon Sugar
  • 1/4 Teaspoon Turmeric Powder
  • 1/4 Teaspoon Ground Cumin
  • 1/4 Teaspoon Coriander Ground
  • 1/2 Teaspoon Red Chili Powder
  • To make Spice Powder Mix
  • 1 Green Cardamom
  • 3 Cloves
  • 1" Stick Cinnamon
  • 1/4 Teaspoon Cumin Seeds
  • 1/2 Teaspoon Carom Seeds
  • 2 Teaspoon Corriander Seeds
  • 2 Teaspoon Fennel Seeds
  • Oil for deep frying
Instructions
Firstly, make the dough.
In a mixing bowl,add all ingredients except oil and water to make dough.
Add hot oil to the flour and mix well.
Rub it well between your palms.
It should hold together if you try to form a ball.
Next add warm water slowly,to form soft dough.
Keep it covered for sometime.
Meanwhile make the stuffing.
Grind all the spices mentioned to form the spice mix,to a coarse powder.

In a pan,add Gram Flour and all other ingredients mentioned for stuffing.
Roast it for while till it gives aroma.
Keep aside to cool.
Pinch dough ball and roll in a disc,about 3 inch wide and 1/2 cm thick.
Place sufficient stuffing at the center.
Bring all the sides of the disc together and pinch to close the kachori.
Roll it further to form even disc.
Meanwhile heat oil,and when its hot,reduce the flame and slowly fry the kachori on low heat till golden brown and crisp.
Drain on kitchen tissue.
Serve hot with sweet date chutney.
Enjoy!

    1. I would LOVE to taste this. I am all about making takeout food at home too. Always so much better, and way cheaper too. These sound full of wonderful flavour. The crispy texture is perfect. I just might have to give it a go at trying to make these.

    4. I completely agree that if you learn to make the things you are tempted to buy as take out, you will make them at home instead. Some of the first new things I learned to cook were the things that my husband and I always wanted to go out and buy. I've never had Besan ki Kachori, but these look delicious. Now, I just need to find all of the ingredients.
