Superbly moist,delicious Fruit Cake / Plum Cake for Christmas with cranberries,raisins,dates and spices and its a No Alcohol recipe😊

A new post for all those like me who love Fruit Cake/ Plum Cake!
Yes! it's the time of the year for which we all wait....Jingle Bell,Eggnog,Puddings,Cookies,Gifts,decorations and what not!

This is one of my favorite time of the year when I try variety of cakes 😁
Last year during Christmas time,I baked a variety of cakes too.
Here are these:Christmas Fruit Cake(this one is different from the one I am sharing here),Lemon Cake.

This fruit cake is very different in taste from the other cake,plus this one is soft and juicy. The fruits here are soaked previously,which are further ground to a puree instead of keeping the chunks of fruits,also there isn't any alcohol used here and the final product is soft and juicy.
Do give this recipe a try and you all will definitely love this version of fruit cake too!

Fruit Cake / Plum Cake
Ingredients
  • For the Fruit part:
  • 1 Cup Brown Sugar
  • 1 Cup Water
  • 1 Tablespoon Powdered Spices
  • 1 Teaspoon Ginger Powder
  • 1/2 Cup Dried chopped Cranberries
  • 1/2 Cup Seedless Chopped Black Raisins
  • 1/3rd Cup Pitted Chopped Dates
  • For Powdered Spices:
  • 4 Cloves
  • 1" Cinnamon Stick
  • 2 Mace Blades
  • 1/2 Nutmeg
  • For Batter:
  • 3/4th Cup Maida / All Purpose Flour
  • 2 Teaspoons Cornstarch
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 1/3rd Cup Butter,softened(not melted)
  • 1/3rd Cup Vegetable Oil
  • 1/2 Cup Ghee / Clarified Butter
  • 2 Nos Eggs
  • 2 Teaspoons Cocoa Powder
  • Additional:
  • 9" Loaf Pan
  • Aluminum foil
  • Parchment paper
Instructions
Firstly,make the fruit base.
In a bowl add the brown sugar and melt it on medium heat.
When it melts reduce the heat and add water.
It will bubble up so be careful.
Now,bring the heat back to medium.
The sugar will start to loosen slowly.
Now,add the powdered spices,all dry fruits,ginger powder.
Cook for 5 to 7 minutes.
Let it cool and refrigerate it for a day.
I refrigerated it for 1 week.
On the day when you will make the cake,grind the fruit mixture to a coarse puree.
Do not add anything extra to grind it.
Preheat the oven at 350 F / 180 C.
Next for the cake,in a mixing bowl sieve twice maida,salt,baking powder,cornstarch.
In another bowl,add the ground fruit puree,add the butter,oil,ghee.
Mix well.
I used a the regular hand whisker/egg beater to do this.
You can use hand mixer or mixer with paddle attachment too.
Break eggs and add one at each time.
Add cocoa powder.
Mix well ,so that all the ingredients are well mixed.
Now to this add the flour mixture in batches till all the flour is consumed.
Line the baking pan with parchment paper.
I used 9" loaf pan.
Pour the cake batter in the pan.
Tap once or twice on the kitchen counter to release air bubbles.
Now tent this pan with aluminum paper.
Bake it for 40 minutes.
Then remove the tent and bake for another 20 minutes or till done and toothpick test is done.
Let it cool completely.
Invert on the cooling rack.
Slice the cake and enjoy this cake during Christmas!

Tips:


  • I had soaked the fruits for a week in refrigerator. You can do this or else make the cake next day.
  • If you need more fruits then you can add tutty frutty,sultanas,prunes,figs,almonds. But you will need to adjust the quantity of the other ingredients accordingly.
  • I have tented the loaf pan with aluminum foil. You can skip this part too.
  • Last 20 minutes I baked the cake without the aluminum tent.
  • Let it cool slightly before inverting it the cooling rack.
  • In this recipe I am making the puree of the soaked fruits.

    4. I love fruit cakes and this looks very similar to one my mom use to make with dark brown sugar. I just love the flavor of molasses in fruit cakes. Saving this for later.

    5. There are so many variations of fruit cakes. Now is the time to get these baked...if not already. I made some years ago for Christmas. The longer they sit...the better they are.

    11. I grew up with having fruit cake at Christmas time!! It's sad...after my grandparents passed, everyone stopped making it. I'm glad to see you are keeping the tradition alive! Looks yummy!
