Pineapple Cake (Britannia Pineapple Cake)



A new yummy post for weekend....Pineapple Cake!! This is very close to Britannia Pineapple cake,and I must say much better than that!

I am very fond of baking and eating cakes! The best one's for me are always the one that are full of butter,moist and fluffy one's.
I like cakes with fondant,but not to eat but to adore them and love them! :)
Even if I don't bake anytime,I make sure I buy any variety of pastry or fruit cake...just to light up the mood!

Recently, I tried Britannia Cakes available in every grocery stores,I liked them but somehow wanted to make just like them.
My try of the cake series is Pineapple cake.
It turned out moist,fragrant and yumm...

Britannia Pineapple Cake

Pineapple Cake (Britannia Pineapple Cake)
Ingredients
  • 1 Cup Maida / All Purpose Flour
  • a Pinch Salt
  • 2 Tablespoons Pineapple Essence
  • 3 Large(Yolks and whites separated) Eggs,at room temperature
  • 3/4th Cup Sugar
  • 1/2 Cup Butter,at room temperature
  • 2 & 1/2 Teaspoons Baking Powder
  • 1/4th Cup Milk,at room temperature
  • 1/4th Cup Tutty Frutty
Instructions
First,in a mixing bowl,beat butter well till its fluffy.
To this add yolks and sugar.
Beat well till sugar gets dissolved well.
I added all egg yolks at the same time.
In another mixing bowl,sieve the flour,salt and baking powder twice.
In a separate mixing bowl,beat the egg whites,till they are fluffy.
Now,add the egg whites to egg yolks mixture.
Slowly add the flour mixture to this egg mixture in batches till well incorporated.
Add all the flour and mix well to form a smooth dough.
Add milk and essence to this batter and mix further.
Now take 1 tablespoon of this batter and coat the tutty frutty.
Add the tutty frutty to the batter.
Preheat the oven at 356F.
Line a loaf pan,with parchment paper or butter paper or grease with butter.
Pour the batter in the loaf pan and tap it on kitchen counter to release the air bubbles.
Now cover the pan with aluminum foil and bake for 20minutes.
Then remove the aluminum foil and bake it at 320F for 30 minutes or till the knife comes out clean.
Let the cake cool before take it out of the pan.
When cooled,remove it from the pan and cut in desired pieces.
Enjoy this yummy cake with tea!

Tips:

  • I have realized that beating egg yolks and egg whites for certain cakes works wonders. So do not skip this step.
  • Try adding chunks of pineapple in this recipe,it  will be better in taste too.
  • If you want to still give a better and authentic pineapple look then add some light green color to it.
  • Adding butter can be skipped.You can add ghee instead.
  • For calorie conscious people try skipping ghee too instead add little pineapple juice and increase the milk quantity but then the baking time will vary.
  • Adjust the oven temperatures as per individual oven settings.
