A new yummy post for veggie lovers....Crispy Paneer Schezwan!

I ended up making this dish as I wanted to consume Paneer stocked in refrigerator and was tired of making Paneer Burji or Palak Paneer.

I prepared this dish by deep frying the paneer fingers.You can bake then or try frying in Air fryer as it will be less oily right!
It's an awesome starter for any parties,as well as potlucks.
Yummy crispy Paneer is very attractive for kids too.

Paneer Schezwan Dry
Ingredients
  • 1 Cup Paneer / Cottage Cheese,cut into fingers
  • For Marination:
  • Salt as per need
  • 1/2 Teaspoon Black Pepper Powder
  • 1/2 Teaspoon Soy Sauce
  • 1/2 Teaspoon Red Chili Sauce
  • 3 Tablespoons Maida/All purpose Flour
  • 2 Tablespoons CornFlour
  • Additional:
  • 4 Tablespoons or as per need Oil
  • 2 Tablespoons Garlic, minced
  • 2 Tablespoons Ginger, minced
  • 2 Small Green Chili ,Slit
  • 1 Small Onion,cubed
  • 4 Sprigs Spring Onion,chopped
  • 1/4th Cup Green Bell Pepper,cubed
  • 1/2 Cup Red Bell Pepper,slit lengthwise
  • 1 & 1/2 Tablespoons Soya Sauce
  • 1/2 Teaspoon White Vinegar
  • 1/2 Teaspoon Black Pepper Powder
  • Salt as per need
  • 1/2 Teaspoon Sugar
  • 1/2 Teaspoon Chilli Sauce
  • 2 Tablespoons Schezwan Sauce (I used Ching's)
  • 1 Tablespoon Cornflour
  • 1 Tablespoon Water
Instructions
First,in a mixing bowl,add the maida,cornflour,salt,pepper powder,soy sauce,chilli sauce.
Add very little water to make a smooth batter.
This batter should not be too thick nor watery.
Coat all the paneer fingers in this batter.
In a deep frying pan,heat oil.
When the oil is hot,deep fry the paneer fingers till crisp.
Drain them on tissue paper and keep them aside.
In a wide skillet,add oil.
When the oil is hot,add ginger,garlic and green chillies.
Fry it for a while.
Then add onion,green bell pepper,red bell pepper,spring onion whites.
Add little salt and toss them on high flame.
Now bring the flame back to medium.
Add all spices(Soy sauce,chilli sauce,vinegar,salt,pepper powder,sugar,schezwan sauce).
Now again bring the flame to high and toss these.
Get the flame to medium.
Let it cook for a while.
Mix cornflour with water and add to the veggies.
When its cooked,add the paneer fingers.
Adjust the salt.
Toss on high flame again.

Garnish with spring onion greens.
Serve immediately and enjoy!

Tips:
  • You can increase or decrease the spice level as per tolerance.
  • This dish tastes best when serve hot and instantly after cooking.
