A new post for valentines day celebration...Chicken Ghee Roast!...my most loved dry chicken preparation after sukka!

I konw its little late to post it but better late than never!....anyways today i.e. on 15th February it's my wedding anniversary!! :) So I will share this recipe for all chicken lovers like my family.

This finger licking yumm dish, I tasted some time back in a typical mangalore restaurant,and was so mesmerized by the taste of this dish,that I kept on thinking how its made.
I called up my friend S from mangalore and asked her whether she knows how its made and she shared with me this recipe of ghee roast that they prepare at home.
I modified the recipe to suit the spice tolerance according to my family as her spice level would make me faint!

Chicken Ghee Roast
Ingredients
  • 250 gms Chicken,cut into pieces,with bones
  • For marination:
  • 2 Tablespoons Yogurt
  • Salt as per need
  • 1 Teaspoon Turmeric Powder
  • 1 Tablepoon Red Chilli Powder
  • For Masala:
  • 2 Tablespoons Ghee/clarified butter
  • 6 Garlic Cloves
  • 1 Small Onion,long cut
  • 1 Small Tomato,deseeded,long cut
  • 6 Peppercorns
  • 4 Cloves
  • 1 Cinnamon Stick,1"
  • 2 Tablespoons Cumin Seeds
  • 2 Tablespoons Coriander Seeds
  • 4 Byadgi Chillies
  • Gooseberry sized ball Tamarind
  • 2 Tablespoons Grated Coconut
  • Additional:
  • 2 Sprigs Curry Leaves
  • 1/2 Teaspoon Sugar
  • 2 Tablespoons More Ghee
  • 2 Sprigs Cilantro,chopped
Instructions
First,wash the chicken pieces thoroughly.
Add all the spices mentioned under marination to the chicken pieces.
Mix well and keep aside.
In a medium skillet,add ghee.
When its hot add all the spices mentioned under masala.
Fry them on medium flame till its leaves a nice aroma.
Let it cool and grind to a smooth paste.
In the same skillet,add ghee.
When its hot add curry leaves.
When they splutter,add the ground masala.
Let it cook till it leaves the sides of pan.
Now add the chicken pieces.
Add very little water,adjust salt and sugar.
Mix well.
Cover and let it cook till the chicken is cooked well and the gravy is very minimal.
Now garnish with cilantro.
Serve hot with rice or roti!

Tips:
  • Add more red chilies and Peppercorns if you want to blow fire out of nostrils.
  • Adjust spice level as per tolerance.
