Chicken 65

As far as I can remember, Chicken 65 is one of my favorite starters  :)
Don't know exactly how the term "Chicken 65" got coined but whatever happened we are happy of the outcome :)

This is an excerpt from Wikipedia:
Chicken 65 is a spicy, deep-fried chicken dish originating from Tamil Nadu, India, as a bar snack, entree, or quick snack.
Many sources claim Chicken 65 was a dish introduced in 1965 at the famous Buhari Hotel restaurant in Chennai by its founder A.M.Buhari, a pioneer in the South Indian food industry.




I had this wish of making perfect chicken 65, restaurant style....and I can say I found the perfect recipe for  me :)

Ingredients: 

For Marination/Frying:
  • 2 Tbsp Maida/All Purpose Flour
  • a pinch of Red food color
  • 2 Tbsp Cornstarch
  • 1 Tsp Soy Sauce
  • Salt as per taste
  • 1/2 Tsp Black Pepper Powder
  • 1/2 Tsp Garam Masala Powder
  • 1/4 Tsp Red Chili Powder(Optional)
  • Oil for frying

For Main Dish:
  • 250 gms of Chicken, skinless,boneless, cubed
  • 2 Green Chillies, slit
  • 1 Tsp Mustard Seeds
  • 10 Curry Leaves
  • 1 Tbsp Ginger,minced
  • 2 Tbsp Garlic,minced
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Hot Chili Sauce
  • Salt as per taste
  • A pinch of Sugar
  • 1 Tsp Vinegar
  • 1 & 1/2 Tbsp Thick Yogurt,whisked
  • Chopped Cilantro
  • 2 Tbsp Oil

Method:
  • Clean and wash the Chicken pieces and keep aside.
  • Make a smooth paste of all the ingredients mentioned under "For Marination/Frying" i.e. (Maida,cornstarch,salt,soy sauce,Black Pepper-Garam Masala-Red Chili Powders,food color). Do not make this batter runny or thick.
  • Add chicken cubes to this and keep aside for 10 mins.
  • In a skillet, add oil. When the oil is hot, deep fry the chicken pieces till cooked.
  • Drain them on paper towel.
  • Now, in a wok, add mustard seeds. When the mustard seeds start to crackle add curry leaves,green chillies,ginger,garlic and fry for 2 mins.
  • To that add,soy sauce,chili sauce,salt,sugar,vinegar and fry for another 1 min.
  • Add whisked yogurt to this mixture and cook for 1 min.
  • Add chicken pieces to this.
  • Coat chicken pieces with this mixture.
  • Garnish with chopped cilantro and serve hot!!


 Tips:
  • The batter for frying should not be thick or runny else the taste of dish will vary.
  • You can increase or decrease the spice levels as per your taste .
