Rasmalai / Cottage Cheese Dumpling in Milk

I am a Rasmalai buff :)
Rasmalai is a dessert which is very close to my heart as I have fond memories of my childhood attached with it.
I don't think anyone who has tasted this dish would not ask for another serving. :)
So here it is my another successful attempt to make a dessert everyone loves and so yumm that last drop of it vanishes in no time!!


Rasmalai Cottage cheese dessert


For the dumplings:
  • 2 ltr Whole milk
  • 1/4 cup Lemon Juice
  •  2 cups sugar
  • 5 cups water
  • 1 tsp semolina
  • 1/2 tsp cardamom powder
  • 2 tsp whey (leftover)
For Milk Syrup:
  • 1 ltr Whole Milk
  • 1/4 tsp Cardamom pwdr 
  • 1/2 cup Sugar 
  • 1/2 cup Condensed milk 
  • 1/2 cup khoya / mawa
  • 2 Almonds crushed
  • 4 Black raisins 
  • 2 Pistachio crushed
  • 1 strawberry chopped
  • a pinch Saffron
Method:
  • Keep the milk to boil on medium heat in a heavy bottom pan. Make sure the milk does not burn. Keep stirring at regular intervals.
  • As the milk comes to a boil, add the lemon juice slowly and stir the milk, as it starts curdling turn off the heat.
  • Drain the whey using a strainer line with muslin cloth.Wrap the cheese in a muslin cloth, rinse under cold water, and squeeze well. 
  • Hang the cheese cloth for almost 1 hr. Let it get dry.
  • Place the cheese in a bowl. Add semolina to it and knead it well for 15 minutes to 20 minutes. 
  • Add 2 tsp whey. It should be smooth enough that it melts when you rub it between two fingers.
  • Divide the dough into equal parts and roll them in smooth balls. Make sure there are no cracks in the balls.
  • Then lightly press to make about patty shape on your palm.
  • Mix the sugar and water in a heavy bottom pan on medium high heat and bring to a boil.
  • Add cardamom powder.
  • Add the cheese balls and close the pan and let it cook for 15 mins on medium heat.This is a crucial step as, if the cheese balls are of not right texture then most of the time when u place the cheese balls in sugary water they break....so pray to God that they should not :P
  • Meanwhile keep milk to boil for syrup. Let the milk reduce to half.
  • Add sugar,cardamom powder, khoya,condensed milk and let it boil for another 5 mins.
  • Well after after 15 mins when u open the lid u can see the beauties smiling at you!!  :)
    They will expand to about double in the volume after cooking.
  • Remove the dumplings from the syrup and add to the milk syrup and cook on low flame for 5 mins.
  • Add saffron.
  • Serve chilled with almonds,pistachios,raisins and strawberries(optional).
