Chole Bhature

I love chole bhature....basically puri/bhature in any form and shapes n sizes I love :)
As a child,i never went for any kind of beans or lentils but when i tried chole i started liking beans.
I used to think every time  i visit any restaurant that how they make such wonderful dish and that too smells heavenly...well I did it myself too and so can you!!

Ingredients:

For Chole:
  • 1 & 1/2 cup garbanzo beans/kabuli chana
  • 2 med size onions, finely chopped
  • 1 large tomato, finely chopped
  • 2 tbsp ginger-garlic paste
  • 1/2 tsp garam masala powder (I used Everest)
  • 1/2 tsp chilli powder (I used Everest)
  • 1 Tbsp chole masala (I used Everest)
  • 1/2 tsp amchur powder
  • salt
  • 1 tea bag tied in muslin cloth(optional)
For Masala:
  • 4 black cardamoms
  • 1 inch cinnamon
  • 5 peppercorns
  • 3 cloves
  • 1 bay leaf
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1/2 tsp fennel seeds
  • 2 dry red chillies
For Garnish:
  • Cilantro chopped
  • Lemon wedges
  • Onion wedges
Method:
  • Wash and soak beans overnight. If you think that beans are getting bigger in size so add additional water later.
  • Dry roast all ingredients mentioned under "Masala". Make sure you dont burn them as it will destroy the taste.Grind it to a fine powder.
  • In a pressure cooker, add little oil and fry onion and tomato till they are mushy.
  • Add dry ground masala to it.
  • Add all powders mentioned above to it.
  • Add ginger-garlic paste to it.
  • Fry all this for about 5 mins til oil starts leaving the sides of the pan.
  • Add soaked chana to this, add salt and water as per desired consistency.
  • Pressure cook this for about 15-20 mins or till it is cooked.
  • Served with cilantro,lemon and onion wedges.

Notes:
  • Spices can be altered as per your choice.
  • Cooking chana with tea bag gives a brownish tinge on chole. This is for better look of chana.

For Bhature:
  • 2 cups -All purpose four
  • 1 cup potato boiled and meshed
  • 1/4 cup Milk
  • 1/2 tsp Baking powder
  • 3/4 tsp salt
  • 1 tsp oil
  • Oil for frying
Method:
  • Mix flour,salt,baking powder well.
  • To this add little oil ,milk and meshed potato.
  • Knead well. This works too good with hand mixer..dough attachment does wonders.
  • Let this dough sit for 2 hrs. Possible cover it with muslin cloth.
  • Make small round ball of dough and flatten them on your palm.
  • Make puris of oval shapes and deep fry them in hot oil.
  • Serve these bhature with chole or any sabji of your choice
Tip:
  • For bhature to puff nicely,press them gently at the center while frying.
